  • Mash 6 hard-boiled egg yolks, 2 tablespoons mayonnaise, 1 teaspoon each smooth mustard, Worcestershire sauce and white wine vinegar, 1/4 teaspoon paprika, the juice of 1/2 lemon, some hot sauce and salt. Beat 1/4 cup cream to soft peaks; fold into the yolks. Dust the whites with paprika, then fill with the yolk mixture. Top with scallions.

12 hard-boiled eggs, peeled
3 oz cream cheese, room temperature (about 6 Tbsp)
1-2 Tbsp sweet pickle relish
2-3 Tbsp Miracle Whip or mayonnaise
salt and black pepper, to taste
1/8 tsp Tony Chachere's Creole seasoning
additional Tony's Creole seasoning for garnish

Steps:

  • 1. Cut the cooked eggs in half lengthwise. Remove cooked egg yolks from egg whites and mash yolks thoroughly with a fork.
  • 2. Add cream cheese, Miracle Whip, sweet pickle relish, salt, black pepper, and Cajun seasoning to egg yolks.
  • 3. Stir until mixture is smooth.
  • 4. Place mixture in a piping bag or resealable food storage (cut off a small hole).

1-1/2 cups mayonnaise
