"MISSY'S" SWEET POTATO CASSEROLE

This is the recipe I have been using for years, and I am putting it here for safekeeping. I was making it this morning for Thanksgiving and noticed that my copy is starting to get soiled. This is so good, you could almost eat it for dessert.

Tips:

  • Choose the right potatoes: Yukon Gold or red potatoes are great for this recipe as they hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will ensure they all cook evenly.
  • Soak the potatoes in cold water: This will help remove excess starch and prevent them from sticking together.
  • Use a well-seasoned cast iron skillet: This will give the potatoes a nice crispy crust.
  • Don't overcrowd the skillet: Cook the potatoes in batches if necessary.
  • Flip the potatoes frequently: This will ensure they cook evenly and get crispy on all sides.
  • Add the butter and herbs towards the end of cooking: This will prevent the butter from burning and the herbs from wilting.
  • Serve immediately: Missy potatoes are best enjoyed hot and crispy.

Conclusion:

Missy potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are crispy on the outside and fluffy on the inside, and the addition of butter and herbs gives them a flavorful and aromatic kick. Whether you are serving them for breakfast, lunch, or dinner, these potatoes are sure to be a hit. So next time you are looking for a simple and satisfying side dish, give Missy potatoes a try!
