MISSISSIPPI MUD COOKIES

We used to make these all the time growing up. I keep hearing them called "no-bake cookies," but this is the name my mom always called them. Even if they don't set up and harden like they should, the chocolate goo tastes mighty fine eaten with a spoon! **UPDATE: Added 11-6-06** I just tried making these again, and for the jillionth time they didn't set up right. I'm going to confer with my mother to see what I might be doing wrong. Until then...make at your own risk!

  • Mise en Place: Before you start baking, measure and prepare all of your ingredients. This will help you stay organized and ensure that you have everything you need.
  • Use Room Temperature Ingredients: Whenever possible, use room temperature ingredients. This will help your ingredients mix together more easily and create a smoother batter.
  • Cream Together the Butter and Sugar: This step is essential for creating a light and fluffy cookie. Make sure to cream the butter and sugar together until they are light and fluffy.
  • Add the Eggs One at a Time: Gradually add the eggs to the batter, one at a time. This will help prevent the batter from curdling.
  • Don't Overmix the Batter: Overmixing the batter will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the Dough: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the Cookies at the Right Temperature: Baking the cookies at the right temperature is essential for achieving the perfect texture. Make sure to preheat your oven to the correct temperature before baking the cookies.
