Time 35m

Yield 15 mini pies

Number Of Ingredients 18

15 mini phyllo shells (1.9-ounce box)
1 tablespoon unsalted butter
2 sweet, crisp apples, such as Honeycrisp, Pink Lady or Jonagold, peeled and cut into 1/2-inch dice
1/2 teaspoon ground cinnamon
Pinch of nutmeg
Pinch of kosher salt
1 teaspoon lemon juice
2 tablespoons light brown sugar
2 teaspoons cornstarch
1 teaspoon vanilla extract
1/2 cup rolled oats
1/2 cup whole-wheat flour
1 tablespoon light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/4 cup unsalted butter, melted
1 tablespoon honey
1/4 cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F. Place the phyllo shells on a baking sheet and bake until crisp, about 5 minutes. Remove from the oven (keep the oven on) and let cool.
  • For the filling: Meanwhile, melt the butter in a large skillet over medium heat. Add the apples, cinnamon, nutmeg, salt and lemon juice. Cook, stirring often, until the apples start to soften and release some juices, about 4 minutes. Add the sugar and continue to cook, stirring often, until the sugar has dissolved, about 2 minutes more.
  • Stir together the cornstarch and 2 tablespoons of water in a small bowl. Stir into the apple mixture and cook, stirring often, until the liquid is very thick, about 2 minutes more. Stir in the vanilla, remove from the heat and set aside.
  • For the granola crisp topping: Line a baking sheet with parchment paper. Stir together the oats, flour, sugar, cinnamon, salt, butter and honey and spread the mixture on the baking sheet, using your hands to form some small clumps. Bake until browned and crisp, about 10 minutes. Remove from the oven, stir in the almonds and let cool.
  • To assemble, add a heaping tablespoon of the filling to each phyllo shell, followed by a tablespoon of the topping. Serve warm or at room temperature.

Time 2h

Yield 8

Number Of Ingredients 8

2 (9 inch) unbaked pie crusts
12 unpeeled Granny Smith apples, cored and quartered
1 cup white sugar
2 teaspoons ground cinnamon
1 ½ teaspoons ground cloves
1 teaspoon freshly grated nutmeg
3 tablespoons butter
3 tablespoons melted butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • Shred the apples into a large bowl. Stir in sugar, cinnamon, cloves and nutmeg. Mix well and place in bottom crust. Dot the top with 3 tablespoons butter.
  • On a cutting board, place rolled out (or packaged) pie crust. With a leaf or apple cookie cutter, cut shapes from the pie crust. Position the cutouts all over the top of the pie, leaving small spaces between cutouts for the vent holes.
  • Bake in the preheated oven for 30 minutes. Remove pie from oven and brush with 3 tablespoons melted butter. Return to oven and bake an additional 15 minutes, or until golden brown. Place a piece of aluminum foil under the pan in case it boils over.

Tips:

  • Use a variety of apples. This will give your pie a more complex flavor and texture. Some good choices include Granny Smith, Honeycrisp, Braeburn, and Pink Lady.
  • Peel and core your apples thinly. This will help them to cook evenly and prevent them from becoming mushy.
  • Add a little bit of lemon juice to your apples. This will help to prevent them from browning and will also add a bit of brightness to the flavor.
  • Don't overwork your dough. Overworking the dough will make it tough. Just mix it until it comes together, then stop.
  • Chill your dough before rolling it out. This will make it easier to work with and will also help to prevent it from shrinking in the oven.
  • Use a sharp knife to cut your pie dough. A dull knife will tear the dough and make it difficult to get a clean cut.
  • Bake your pie at a high temperature for the first 15 minutes. This will help to set the crust and prevent it from becoming soggy.
  • Reduce the temperature to 350 degrees Fahrenheit for the remaining baking time. This will allow the pie to finish baking without overcooking the crust.
  • Let your pie cool for at least an hour before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

Miss Hattie's Apple Pie is a classic dessert that is perfect for any occasion. With its flaky crust, tender apples, and sweet-tart filling, this pie is sure to please everyone at your table.
