1 cup white miso
1/3 cup rice vinegar
1/2 cup light-brown sugar, packed, plus one 1 teaspoon
4 skinless salmon fillets (6 to 8 ounces each)
1 cup packed cilantro leaves, chopped
1/4 cup fresh lime juice (2 to 3 limes)
1 shallot, roughly chopped
1 (1/4 ounce) red Thai chili, roughly chopped
1 garlic clove
One 2-inch piece fresh ginger, peeled and grated (1 tablespoon)
2 tablespoons flaxseed oil

Steps:

  • In a medium saucepan combine miso, vinegar, 1/2 cup brown sugar, and 1/3 cup water. Cook over medium heat, stirring occasionally, until miso and sugar have dissolved; cool to room temperature. In a resealable plastic bag combine salmon and miso mixture. Marinate in the refrigerator for at least 2 hours.
  • Meanwhile, in a blender, combine cilantro, lime juice, shallot, chili, garlic, ginger, oil, and remaining teaspoon of brown sugar. Blend until mixture is smooth.
  • Heat broiler with the rack in the highest position. Lift salmon from marinade; broil salmon until cooked through, about 10 minutes. Serve with cilantro sauce.

6 salmon fillets (about 5 ounces each)
Salt and freshly ground black pepper
1/4 cup fresh lemon juice
1 tablespoon rice wine (mirin)
1 tablespoon miso paste
4 Yukon gold potatoes, cut into 2-inch chunks
1 tablespoon olive oil
2 cloves garlic, minced
2 teaspoons freshly chopped rosemary leaves
1/4 cup freshly chopped cilantro leaves

Steps:

  • Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.
  • Season salmon with salt and black pepper and place in roasting pan. In a small bowl, whisk together lemon juice, rice wine and miso paste. Brush mixture all over salmon in pan.
  • In a large bowl, combine potatoes, oil, garlic, rosemary, and salt and black pepper to taste. Toss to coat potatoes. Arrange potatoes alongside salmon (or on a separate baking sheet if there's not enough room).
  • Roast salmon and potatoes 20 to 25 minutes, until fish and potatoes are fork-tender.

2 cups fresh snow peas
1 medium sweet red pepper, julienned
1 small onion, halved and thinly sliced
1 package (8-1/2 ounces) ready-to-serve whole grain brown and wild rice medley
6 ounces fresh baby spinach (about 7 cups)

  • In a small bowl, whisk vinegar, honey and 4-1/2 teaspoons miso until smooth. Gradually whisk in 1/3 cup canola oil and sesame oil; set aside. , Spread remaining 4-1/2 teaspoons miso over salmon. 2 (1 1/2-pound) salmon fillets, skin removed
1 cup miso paste
¼ cup sake
½ cup brown sugar
2 tablespoons sesame seeds
1 teaspoon sesame oil
¼ cup water
½ cup prepared soy-ginger salad dressing
3 tablespoons seasoned rice vinegar
