Time 20m

Yield 2/3 cup, 5 serving(s)

Number Of Ingredients 7

1 large about 13-oz . potato
3 cups cauliflower florets
3 tablespoons fat-free half-and-half
1 tablespoon light whipped butter
1/4 teaspoon salt
pepper and additional salt, to taste
1/2 teaspoon crushed garlic

Steps:

  • Bring a large pot of water to a boil. While waiting for the water to boil, peel and cube the potato.
  • Once water is boiling, add peeled potato cubes and cauliflower. Wait for the water to return to a boil, and then reduce heat to medium. Cook for 15 - 20 minutes (until potatoes and cauliflower are very tender).
  • Remove the pot from heat and strain out all of the water. Transfer contents to a large bowl, and add half & half, butter/buttery spread, salt, and (if you like) crushed garlic. Mash it all together with a potato masher, until completely blended. Season to taste with pepper and additional salt. Enjoy!

Tips:

  • Choose the right mushrooms. Baby bella mushrooms or white button mushrooms are the best choice for this recipe. They are small and have a mild flavor that will absorb the marinade well.
  • Make sure the mushrooms are clean. Rinse the mushrooms under cold water and pat them dry with a paper towel. This will help the marinade to adhere to the mushrooms.
  • Use a flavorful marinade. The marinade is what gives these mushrooms their amazing flavor. Be sure to use a marinade that you like the taste of. Some good options include a mixture of olive oil, soy sauce, garlic, and ginger; or a mixture of balsamic vinegar, honey, and rosemary.
  • Let the mushrooms marinate for at least 30 minutes. This will give the marinade time to penetrate the mushrooms and infuse them with flavor.
  • Cook the mushrooms over medium-high heat. This will help to caramelize the mushrooms and give them a slightly crispy exterior.
  • Serve the mushrooms immediately. These mushrooms are best enjoyed hot and fresh out of the pan.

Conclusion:

Miracle Mashies are a delicious and easy-to-make appetizer or side dish. They are perfect for any occasion, from a casual get-together to a formal dinner party. With their amazing flavor and crispy texture, these mushrooms are sure to be a hit with everyone who tries them.
