MINTED CARROTS
Using small, slender carrots makes this an especially stunning side, but large carrots work equally well when halved lengthwise.

BUTTERY MINT CARROTS
I reworked an old recipe to blend mint (traditionally a complement to lamb) with buttery-sweet carrots. This quick way of dressing up carrots makes a colorful accompaniment for other meats as well.

MINTED GLAZED CARROTS
Found on bunch carrots from Siri Produce Inc. in Oregon. DON'T use those awful "baby carrots" from the grocery store. Whole carrots (small-medium sized) and organic are best. If the carrots are small leave whole but if they are medium-sized cut in half lengthwise. If your carrots are good quality they don't need to be peeled. Recipe adapted slightly.

Tips:
- Choose the right carrots: Look for young, tender carrots with smooth skin and vibrant color. Avoid carrots that are limp, wrinkled, or have brown spots.
- Peel and cut the carrots evenly: This will help them cook evenly. Aim for carrot pieces that are about 2-3 inches long and 1/2 inch thick.
- Blanch the carrots before roasting: This step helps to tenderize the carrots and bring out their natural sweetness. To blanch the carrots, bring a large pot of salted water to a boil. Add the carrots and cook for 3-4 minutes, or until they are tender-crisp. Drain the carrots and immediately transfer them to a bowl of ice water to stop the cooking process.
- Make sure the carrots are thoroughly dried before roasting: This will help them to caramelize and brown properly.
- Use a high-quality olive oil: This will add flavor and richness to the carrots. Don't use extra-virgin olive oil, as it has a low smoke point and can burn easily.
- Season the carrots generously: Salt, pepper, and garlic powder are all essential seasonings for roasted carrots. You can also add other herbs and spices, such as thyme, rosemary, or cumin.
- Roast the carrots at a high temperature: This will help them to caramelize and brown quickly. Aim for a temperature of 425 degrees Fahrenheit.
- Stir the carrots occasionally during roasting: This will help them to cook evenly.
- Remove the carrots from the oven when they are tender-crisp: You don't want to overcook them, or they will become mushy.
Conclusion:
These minted glazed carrots are a delicious and healthy side dish that can be enjoyed as part of a weeknight meal or a special occasion dinner. They are easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy side dish, give these minted glazed carrots a try!
