Steps:
- 1. In a small mixing bowl combine butter and corn syrup. Add 2 c. confectioners' sugar and extract; beat well. Stir in 1 c. confectioners' sugar. Turn out on a work surface sprinkled with confectioners' sugar; knead until sugar is absorbed and smooth.
- 2. Divide the candy dough into as many different colors that you desire. Add 2 drops of the desired color and work into the dough. Shape into 3/4" balls; roll in grandulated sugar. Flatten with a fork. If you are using a candy mold, follow the same steps, except you will press gently into the mold after rolling in sugar and you will not press with the fork.
- 3. Let stand, uncovered at room temp for 1 day. Store in an airtight container. You can also separate the mixture and add the separate flavors and food coloring...i.e. red for peppermint...green for spearmint. Or if you prefer one flavor..you can still separate so you can have an array of colors. Next we rolled them in a long tubular shape and rolled waxpaper around the tube..then refrigerated until chilled and cut using bakers string or a slim sharp knife.

Tips:
- Use high-quality chocolate for the coating. This will make a big difference in the overall flavor of the patties.
- Make sure the chocolate is tempered before coating the patties. This will help it set properly and give it a smooth, shiny finish.
- If you don't have a candy thermometer, you can test the chocolate to see if it's tempered by dipping a spoon into the chocolate and then placing it in a glass of cold water. If the chocolate sets quickly and evenly, it's tempered. If it takes a long time to set or it sets unevenly, it needs to be tempered for longer.
- When coating the patties, use a fork or tongs to carefully dip each one into the chocolate. Make sure the entire patty is coated evenly.
- Place the coated patties on a parchment paper-lined baking sheet and let them set completely. This will take about 30 minutes at room temperature or 15 minutes in the refrigerator.
- Once the patties are set, you can store them in an airtight container at room temperature for up to 2 weeks.
Conclusion:
Mint patties are a classic candy that is easy to make at home. With just a few simple ingredients, you can create delicious and refreshing treats that are perfect for any occasion. These tips can help you make the best mint patties possible.
