CREAMY CHICKEN AND WILD RICE SOUP

A supremely filling, hearty soup. I serve this on cold rainy days with a loaf of homemade bread. Hint: this is perfect for leftover rotisserie chicken or chicken you've pulled from the bone after making homemade chicken stock! This soup makes great leftovers, but you might want to thin it slightly with skim milk or water when reheating.

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 13

4 cups chicken broth
1 cup carrot, sliced
1 cup potato, peeled and cut up
1/3 cup wild rice, uncooked
1/3 cup green onion, sliced
1/3 cup green bell pepper
1/2 teaspoon dried thyme, crushed
1/4 teaspoon black pepper
2 tablespoons butter
1 cup half-and-half
3 tablespoons all-purpose flour
1 1/2 cups cooked chicken breasts, chopped
2 tablespoons dry sherry

Steps:

  • In large pot bring to a boil: broth, carrots, potatoes, wild rice, green onion, bell pepper, thyme, and black pepper.
  • Cover and simmer 45 minutes or until rice is tender.
  • Stir in butter and half-and-half.
  • Slowly add flour, stirring constantly to prevent lumps from forming.
  • Stir in chicken and sherry and heat through.

Tips:

  • Use high-quality ingredients. Fresh, organic vegetables and free-range chicken will make a big difference in the flavor of your soup.
  • Don't overcrowd the pot. If you add too much chicken or vegetables, the soup will be too thick and not cook evenly.
  • Simmer the soup for at least 30 minutes. This will allow the flavors to meld and develop.
  • Season the soup to taste. Add salt, pepper, and other spices to your liking.
  • Serve the soup with a variety of toppings. Some popular options include sour cream, shredded cheese, and chopped green onions.

Conclusion:

Minnesota creamy chicken wild rice soup is a hearty, flavorful soup that is perfect for a cold winter day. It is also a relatively easy soup to make, and it can be tailored to your own taste preferences. If you are looking for a delicious and comforting soup, this is the one for you.
