Nonstick cooking spray
1 tablespoon olive oil
1 medium yellow onion, diced
2 large garlic cloves, minced
1 bunch chard, ribs and stems removed and leaves chopped
6 ounces oyster or baby portabella (cremini) mushrooms, cut into bite-size pieces
12 eggs
1/4 cup grated Parmesan cheese
2 or 3 dashes hot sauce, such as Tapatio
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 375 degrees F. Spray the cavities of a 12-cup muffin tin with the cooking spray.
  • Heat the olive oil in a large skillet over medium-high heat. Cook the onion, stirring occasionally, until softened, 4 to 5 minutes. Add the garlic and cook for 1 minute. Add the chard and mushrooms and cook until the chard wilts and mushrooms release their moisture, 5 to 6 minutes. Season with salt and pepper.
  • Whisk the eggs with 1/4 cup grated Parmesan cheese and a few dashes of hot sauce in a large bowl, preferably with a spout. Season with salt and pepper.
  • Evenly divide the chard mixture between the muffin cups. Pour the egg mixture over the top and stir each cup with a fork to make sure the ingredients are evenly distributed. 1 package (16 ounces) bulk pork sausage
4 green onions, finely chopped
1/2 cup finely chopped sweet red pepper
1 garlic clove, minced
4 large eggs
1 carton (8 ounces) Mascarpone cheese
1 teaspoon salt
1 teaspoon crushed red pepper flakes
1 teaspoon Worcestershire sauce
1/2 teaspoon dried sage leaves
1/2 teaspoon dried thyme
1/4 teaspoon ground mustard
1/2 cup shredded Swiss cheese

Steps:

  • Preheat oven to 400°. Roll puff pastry to 1/8-in. thickness. Cut out twenty-four 2-1/2-in. circles from each sheet. Press onto the bottoms and up the sides of greased miniature muffin cups., In a large skillet, cook the sausage, onions, red pepper and garlic over medium heat until meat is no longer pink; drain. Spoon into pastry cups., In a small bowl, combine the eggs, Mascarpone cheese, salt, pepper flakes, Worcestershire sauce, sage, thyme and mustard. Spoon over tops and sprinkle with Swiss cheese., Bake until a knife inserted in the center comes out clean, 10-12 minutes. Serve warm.

15 ounces pkg. pie crusts, refrigerated
1 1/2 cups swiss cheese, shredded
2 tablespoons green onions, sliced
1 tablespoon bacon, cooked and crumbled
2 eggs
1/2 cup milk
1/4 teaspoon salt
1 dash nutmeg

Steps:

  • Allow both pie crust pouches to stand at room temperature for 15 to 20 minutes. Heat oven to 375. spray 24 miniature muffin cups with nonstick cooking spray.
  • Unfold 1 pie crust; peel off top plastic sheet. Press out fold lines. Place crust on cutting board or pastry cloth; peel off remaining plastic sheet. Using a 2-1/2 inch round cookie cutter, cut 12 circles. Repeat with remaining pie crust. Press 1 circle of dough into bottom and up the sides of each sprayed muffin cup.
  • Place 1 tablespoons cheese in each cup, top each with a few onion slices and crumbled bacon. In a 2-cup measuring cup; combine eggs, milk, salt and nutmeg; beat well with fork. Pour mixture into crusts; filling to within 1/4 inch of top.
