1 c light brown sugar, firmly packed
1/2 c all purpose flour
2 eggs, beaten
2/3 c melted butter (measure before melting)
1 c pecans, coarsley chopped

Steps:

  • 1. Preheat oven to 350. Grease muffin pans or place paper cups into muffin pans.
  • 2. Using a wooden spoon, mix all ingredients and blend well. Fill prepared muffin pans 2/3 full. NOTE: you can place a pecan half on top of each muffin at this point if you so desire.
  • 3. Bake at 350 for 12-15 minutes. Check for doneness after 10 minutes using a toothpick or cake tester.
