Yield 4 dozen squares

Number Of Ingredients 6

1 c (2 sticks) butter or margarine, softened
3/4 c granulated sugar
1 large egg
1 t vanilla extract
2 1/4 c all-purpose flour
2 c (12 oz) Nestle Toll House Semi-Sweet Chocolate Mini Morsels, divided

Steps:

  • Preheat oven to 350. Beat butter and sugar in large mixer bowl until creamy. Beat in egg and vanilla extract. Gradually beat in flour. Stir in 1 cup morsels. Press onto bottom of ungreased 13x9-inch baking pan. Bake for 30 to 33 minutes or just until top is light brown. Immediately sprinkle with remaining morsels. Let stand for 5 minutes or until morsels are shiny; spread evenly. Cool completely in pan on wire rack. Cut into squares.

Tips:

  • Use chilled butter: Cold butter helps prevent the cookies from spreading too much in the oven and results in a more tender texture.
  • Cream the butter and sugar together until light and fluffy: This will help incorporate air into the mixture, resulting in a lighter, more crumbly cookie.
  • Be careful not to overmix the dough: Overmixing can result in a tough cookie. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough helps firm it up and prevents it from spreading too much in the oven.
  • Bake the cookies until the edges are just beginning to brown: Overbaking will result in a dry, crumbly cookie.
  • Let the cookies cool completely before frosting: This will help prevent the frosting from melting.

Conclusion:

These mini morsel shortbread squares are a delicious and easy-to-make treat. They are perfect for any occasion, from a simple snack to a special dessert.
