MERINGUE GHOSTS AND PUMPKINS

Meringue Ghosts and Pumpkins image

A couple of easy piping techniques transform a simple meringue into spooky ghosts, pumpkins and jack-o'-lanterns for Halloween. You'll need some orange and green food coloring; make sure they're not oil based, since fat can make a meringue deflate.

Categories     dessert

Time 3h50m

Yield 25 to 30 meringues

Number Of Ingredients 8

3 large egg whites, at room temperature
1/4 teaspoon cream of tartar
Pinch kosher salt
3/4 cup sugar
1/2 teaspoon pure vanilla extract
Green gel food coloring
Orange gel food coloring
1 tablespoon mini chocolate chips

Steps:

  • Preheat the oven to 225 degrees F.
  • Whip the egg whites in a stand mixer fitted with a whisk attachment on medium speed until very foamy and almost forming soft peaks. Add the cream of tartar and salt and increase the mixer speed to medium high. Gradually add the sugar while mixing, 1 tablespoon at a time, until stiff peaks form, about 6 minutes. Mix in the vanilla extract.
  • Remove 1/4 cup of the meringue to a small bowl and stir in 2 drops of green gel food coloring until fully incorporated. Transfer to a piping bag fitted with a small round tip.
  • Transfer half of the remaining meringue to a piping bag fitted with a large round tip. Set aside.
  • Add 4 drops of orange gel food coloring to the meringue still in the mixer bowl and mix until incorporated. Dip a toothpick or skewer into the bottle of orange gel food coloring and drag 3 or 4 lines of food coloring lengthwise along the inside of a piping bag fitted with a large open star tip, spacing the lines apart evenly. Transfer the orange meringue to this piping bag.
  • Pipe a dot of meringue in each corner of a baking sheet and press a sheet of parchment paper on top, using the dots to keep it in place. Make ghosts by piping the white meringue into small mounds on the parchment, alternating pressure on the piping bag to create two or three stacked mounds for each ghost. Carefully press two mini chocolate chips, flat-side out, to make eyes for each ghost. Press another mini chocolate chip, pointy-tip up, in each of a few ghosts to make a mouth.
  • Make pumpkins by piping the striped orange meringue into small mounds, making sure to hold the piping tip far enough above the baking sheet so that they have some height. Pipe leaves and stems with the green meringue on top of each pumpkin. Carefully press mini chocolate chips, pointy-tip up, into some of the pumpkins to make the eyes and a nose. Line up 4 or 5 chips the same way to make a mouth for each jack-o'-lantern.
  • Bake the meringues for 1 hour, then turn off the oven and leave the meringues inside with the door closed for 2 hours 30 minutes more to fully dry out.

DEEP-DISH PUMPKIN-MERINGUE PIE

Deep-Dish Pumpkin-Meringue Pie image

This mile-high pumpkin pie has major curb-appeal, thanks to a simple meringue topping. For just the right texture, whip the whites until they hold stiff, glossy peaks-but keep the mixture still spreadable enough that you can make decorative swirls in it as you top the pie. Keep in mind that the baked pie needs at least 6 hours to chill, so it's best to make it the day before you need it.

Time 2h10m

Yield Makes one 9-inch deep-dish pie

Number Of Ingredients 14

1 small disk Versatile Pate Brisee
All-purpose flour, for surface
3 large eggs
1 can (15 ounces) pure pumpkin puree
1 can (12 ounces) evaporated milk
3/4 cup packed light brown sugar
1 tablespoon cornstarch
1 teaspoon pure vanilla extract
3/4 teaspoon ground cinnamon
3/4 teaspoon ground ginger
Coarse salt
1/4 teaspoon freshly grated nutmeg
2 cups granulated sugar
8 large egg whites, room temperature

Steps:

  • Preheat oven to 375°F. Make the crust: On a lightly floured surface, roll out dough to an 1/8-inch thickness. Fit dough into a 9-inch deep-dish pie plate. Trim edges, leaving a 1-inch overhang; fold edges under and crimp as desired. Refrigerate 30 minutes.
  • Line crust with parchment, and fill with pie weights or dried beans. Bake until edges just start to turn golden, about 15 minutes. Remove pie weights and parchment. Bake until crust is golden brown, 15 to 20 minutes more. Let cool on a wire rack.
  • Meanwhile, make the filling: Whisk together eggs, pumpkin, evaporated milk, brown sugar, cornstarch, vanilla, cinnamon, ginger, 1/2 teaspoon salt, and the nutmeg in a large bowl.
  • Reduce oven temperature to 325°F. Pour filling into cooled crust. Bake until center is set but still slightly wobbly, 50 to 55 minutes. Let cool in pie plate set on a wire rack. Refrigerate until well chilled, at least 6 hours (preferably overnight).
  • Just before serving, make the meringue: Combine granulated sugar and egg whites in the heatproof bowl of a mixer set over a pan of simmering water. Whisk until sugar dissolves, about 3 minutes. Transfer bowl to mixer, and whisk on medium speed for 3 minutes. Raise speed to high, and whisk until stiff glossy peaks form, about 6 minutes more. Dollop meringue onto pie, and spread using a swirling motion.
  • Hold a small handheld kitchen torch at a 90-degree angle 3 to 4 inches from surface of meringue. Move flame back and forth until meringue starts to brown.

Yield 20-24 servings

Number Of Ingredients 25

For the cake:
1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
3 cups all-purpose flour, plus more for pan
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon freshly grated nutmeg
1 teaspoon ground ginger
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 1/3 cups canned pumpkin purée
1 cup sour cream
3/4 cup speculoos cookie butter (preferably Biscoff)
2 teaspoons vanilla extract
2 cups (packed) light brown sugar
4 large eggs
For the meringue:
4 large egg whites
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 tablespoons pepitas (pumpkin seeds)
Special Equipment
A 13x9" baking pan, preferably light metal

Steps:

  • Bake the cake:
  • Preheat oven to 350°F. Butter baking pan, line with parchment paper, then butter parchment. Dust pan with flour, tapping out excess.
  • Whisk baking powder, cinnamon, nutmeg, ginger, salt, baking soda, and 3 cups flour in a large bowl. Whisk pumpkin, sour cream, cookie butter, and vanilla in a medium bowl. Using an electric mixer on medium-high speed, beat brown sugar and 1 cup butter in another large bowl until lightened in color and fluffy, about 3 minutes. Add eggs one at a time, beating on medium speed after each addition, until combined. Add dry ingredients in 3 additions, alternating with pumpkin mixture in 2 additions, beginning and ending with dry ingredients. Scrape batter into prepared pan; smooth surface.
  • Bake cake until golden brown and a tester inserted into the center comes out clean, 50-60 minutes. Transfer pan to a wire rack and let cool, about 2 hours.
  • Make the meringue:
  • Pour enough water into a small saucepan to come 1" up sides; bring to a simmer. Whisk egg whites, granulated sugar, vanilla, nutmeg, cinnamon, and salt in a large bowl. Place bowl over simmering water, making sure bottom of bowl does not touch water, and cook, stirring constantly, until whites are hot to the touch and sugar is dissolved, 1-2 minutes. Remove bowl from water. Using electric mixer on high speed, beat egg white mixture until cooled, fluffy, and holds stiff peaks, about 5 minutes.
  • Spread meringue evenly over cake, creating peaks and valleys with a spatula. Sprinkle pepitas over meringue. If desired, heat with a kitchen torch or broiler, watching carefully and checking every minute, to lightly brown top, about 5 minutes total. Slice into pieces and serve.
  • Do Ahead
  • Cake, without meringue, can be made 1 day ahead; cover and store at room temperature.

Tips:

  • Use a piping bag fitted with a small round tip to create the meringue pumpkins.
  • Bake the meringues at a low temperature (200°F) for a longer period of time (2 hours) to prevent them from browning.
  • Allow the meringues to cool completely before decorating them.
  • Use a variety of food coloring gels to create different colored pumpkins.
  • Be creative with your decorations! You can use edible glitter, sprinkles, or even candy corn to add a festive touch to your pumpkins.

Conclusion:

These mini meringue pumpkins are a delicious and festive treat that are perfect for Halloween or Thanksgiving. They are easy to make and can be decorated in a variety of ways, making them a fun and creative project for kids and adults alike. So gather your ingredients and get started on your own batch of mini meringue pumpkins today!
