1 1/2 lb extra-lean (at least 90%) ground beef
1/2 cup Progresso™ Italian-style dry bread crumbs
1/2 cup pepperoni-flavored pizza sauce (from 14-oz jar)
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
1 egg
1/4 cup shredded Italian-style six-cheese blend or mozzarella cheese (1 oz)
Additional pizza sauce, heated, if desired

Steps:

  • Heat oven to 350°F. In large bowl, mix all ingredients except cheese and additional pizza sauce. Press beef mixture into 12 regular-size muffin cups (cups will be very full). Place muffin pan on cookie sheet in oven to catch any spillover.
  • Bake about 30 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves in middle of muffin pan reads 160°F.
  • Sprinkle 1 teaspoon cheese over each loaf. Bake 1 to 2 minutes longer or until cheese is melted. Immediately remove from cups. Serve with pizza sauce.

1 small onion, diced
1/2-1 teaspoon minced garlic
1 cup shredded mozzarella cheese, divided
1/3 cup spaghetti sauce, plus
2 tablespoons spaghetti sauce
1 egg
3 tablespoons grated parmesan cheese
4 tablespoons Italian seasoned breadcrumbs
2 teaspoons italian seasoning

Steps:

  • Preheat the oven to 425°F and spray a 6-cup muffin tin with nonstick cooking spray.
  • mix the ground turkey, diced onion, 3/4 cup mozzarella cheese, 1/3 cup spaghetti sauce, the egg, parmesan cheese, bread crumbs, and italian seasoning.
  • Place meat mmixture in muffin tins.
  • Put 2 tablespoons of remaining spaghetti sauce and sprinkle with the remaining 1/4 cup mozzarella cheese.

1 1/2 lbs lean ground beef

  • In a large bowl, combine the first 4 ingredients.
  • Crumble beef and add to mixture; mix well.
  • Shape into 6 loaves.
  • Place in a greased 13x9 inch baking dish.

6 oz package stove top stuffing mix
1 Tbsp worcestershire sauce
1 tsp italian seasonings
1 c water chestnuts
3/4 c spaghetti sauce
3/4 c mozzarella cheese

Steps:

  • 1. Preheat oven to 375 degrees. Mix meat, stuffing mix, Worcestershire, Italian seasoning, and water and until well blended. Press into 12 muffin cups (or 24 mini muffin cups) sprayed with cooking spray.
  • 2. Make an indentation in center of each meatloaf with the back of a spoon; fill evenly with the spaghetti sauce.
  • 3. Bake for 30 minutes (around 15 minutes if using a mini muffin pan) or until meatloaves are done. Top evenly with the mozzarella cheese.
  • 4. Bake 3-5 more minutes or until cheese is melted
  • 5. Let meatloaves sit a couple of minutes before removing.
  • 6. Notes If you want a plain version skip the Italian seasonings and spaghetti sauce and just top with a little ketchup after removing from the oven.

12 cupcake liners
1 large egg, beaten
1/2 c milk
1/4 c marinara sauce
1/2 c quick cooking oats
1 1/3 c itaian bread crumbs
1/2 Tbsp italian seasoning
2 clove garlic, minced
1 lb ground turkey
12 cubes of mozzarella cheese
additional marinara sauce
shredded mozzarella cheese

Steps:

  • 1. Preheat oven to 375 degrees F. Line 12 count muffin tin with cupcake liners. In a large bowl, combine the beaten egg, milk, marinara sauce, uncooked quick cooking oats, ground turkey, Italian seasoning, garlic and bread crumbs.
  • 2. Divide mixture into twelve equal portions. Insert one cheese cube into center of meat and roll in hands to form the meat around the cheese into a ball. Place into muffin tin and continue with remaining meat and cheese.
  • 3. Top with a tablespoon (more or less depending on your preference) and shredded mozzarella cheese.
  • 4. Bake uncovered on center oven rack for 25 minutes.
