MY MINI GREEN BEAN CASSEROLE
I LOVE green bean casserole...I HATE leftovers. This recipe can serve as a side dish for two or as a whole meal for one. If you want you can leave out the mushrooms and substitute for cream of celery. However, I really like mushrooms. Some people may also like to sprikle some french's dried onions on top, but once again, it is not my thing.

Tips:
- Choose fresh green beans: Look for green beans that are bright green in color and have no blemishes. Avoid beans that are yellowed or have brown spots.
- Trim the green beans: Trim the ends of the green beans before cooking. You can also cut the beans into smaller pieces if desired.
- Blanch the green beans: Blanching the green beans before cooking helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green. Drain the beans and rinse them with cold water.
- Use a variety of ingredients: Don't be afraid to experiment with different ingredients in your mini green bean casseroles. You can add chopped onion, celery, carrots, mushrooms, or even bacon. You can also use different types of cheese, such as cheddar, mozzarella, or Parmesan.
- Make it ahead of time: Mini green bean casseroles can be made ahead of time and reheated before serving. This makes them a great option for busy weeknights.
Conclusion:
Mini green bean casseroles are a delicious and versatile side dish that can be enjoyed by people of all ages. They are perfect for potlucks, picnics, and family gatherings. With a little creativity, you can create your own unique mini green bean casserole that everyone will love.
