If the buttercream doesn't come together after all of the butter has been incorporated, add some shortening one tablespoon at a time until the mixture starts to transform. -Julie Thomas, Saukville, Wisconsin

Yield Makes 12

Number Of Ingredients 11

1 1/2 cups all-purpose flour, (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup packed light-brown sugar
1/4 cup granulated sugar
1/4 cup sour cream
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups mini chocolate chips
1 pint vanilla ice cream, softened

Steps:

  • Preheat oven to 350 degrees, with rack in center. In a medium bowl, whisk together flour, baking soda, and salt. Using an electric mixer, beat butter and sugars until light and fluffy. Add sour cream, egg, and vanilla; beat until smooth. With mixer on low, gradually add flour mixture; mix in 1 cup chocolate chips.
  • Using 1 rounded tablespoon per cookie, drop mounds of dough, about 1 1/2 inches apart, onto two baking sheets. (You'll have 25 to 30 cookies.) Bake until golden, 10 to 12 minutes; transfer to a rack to cool completely.
  • Scatter remaining chocolate chips on a plate. Place about 2 tablespoons ice cream between 2 cookies, bottoms facing in; press gently. Roll the sides of each sandwich in chips. (If ice cream is melting, place sandwiches in freezer until firm enough to roll in chips.) Transfer sandwiches onto baking sheets. Freeze until firm, at least 2 hours; then wrap individually in plastic.

Time 14h20m

Yield 12 ice cream sandwiches

Number Of Ingredients 11

2 1/4 cups flour
3/4 teaspoon baking soda
1 teaspoon fine salt
2 sticks softened butter (1/2 pound)
1 cup sugar
1/2 cup packed light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 1/2 cups semi-sweet chocolate (about 8 oz.)
1/2 cup roughly chopped bittersweet chocolate chunks (2 1/4 ounces)
1/2 gallon, about 6 cups mint chocolate chip ice cream

Steps:

  • Preheat an oven to 350 degrees F. Combine the flour, baking soda and salt in a large bowl. Beat the butter, granulated sugar and brown sugar together until light and fluffy (about 3 minutes) on medium speed. Beat in the eggs, one at a time, then add the vanilla.
  • At a low speed, beat in the dry ingredients in batches, until just blended, do not over beat or the dough will get tough. Stir in the chocolate chunks and chopped chocolate using a wooden spoon until well combined. Wrap the bowl with plastic and chill dough 30 minutes or overnight.
  • Shape or scoop into 2-inch balls using a spoon or ice cream scoop. Place on cookie sheets, about 3 inches apart. (About 6 cookies per tray with 2 trays per batch.) Flatten them slightly and bake until golden brown around the edges, about 15 to 18 minutes. Let cool on tray about 3 minutes. Transfer the cookies to a cooling rack and cool completely.
  • Remove the ice cream from the freezer about 5 minutes to thaw/soften slightly before scooping. Using a 2-ounce ice cream scoop, place 3 scoops of ice cream (about 1/2 cup) onto the flat side of a cookie. Top with another cookie and press gently to flatten slightly. Using an offset spatula or a butter knife, smooth the ice cream around the edges of the cookie until the ice cream is flush with the outside of the cookie. Serve immediately or re-freeze until ready to serve. If re-freezing, thaw the sandwich for about 4 to 5 minutes before serving.

Tips:

  • Use high-quality ice cream. The better the ice cream, the better the sandwiches will be. Look for ice cream that is made with fresh, natural ingredients and has a smooth, creamy texture.
  • Freeze the ice cream for at least 4 hours before assembling the sandwiches. This will make it easier to slice and handle the ice cream without it becoming too soft.
  • Use a variety of cookies. You can use any type of cookie you like, but chocolate chip cookies are a classic choice. You could also try using oatmeal cookies, peanut butter cookies, or shortbread cookies.
  • Get creative with your toppings. You can top the ice cream sandwiches with anything you like, such as sprinkles, chopped nuts, or chocolate chips. You could also drizzle them with chocolate sauce or caramel sauce.
  • Serve the sandwiches immediately. Ice cream sandwiches are best enjoyed fresh. If you need to store them, wrap them tightly in plastic wrap and freeze them for up to 2 weeks.

Conclusion:

Mini chocolate chip ice cream sandwiches are a delicious and easy-to-make summer treat. They are perfect for parties, picnics, or a special snack. With a few simple ingredients and a little bit of time, you can create these delightful treats that everyone will love. So, what are you waiting for? Get started today!
