I made this up with the ingredients I had on hand, and once they came out of the oven my taste-testers lined up. We all agreed they are very much like the Cheddar Bay Biscuits at Red Lobster, only much less greasy and less salty, and I would imagine much better for you.

Time 20m

Number Of Ingredients 5

2 c biscuit/baking mix
1 1/2 c mozzarella cheese, shredded
3 clove garlic, minced
2/3 c milk
1 pinch coarse ground sea salt

Steps:

  • 1. Preheat oven to 350 degrees. Lightly spray or grease a mini muffin tin (or if you don't have one, use a regular cookie sheet). In a bowl, combine the Bisquick, cheese, salt and garlic. Stir in the milk just until moistened.
  • 2. Drop by rounded teaspoon into muffin cups (or onto sheet). Bake for 9-11 minutes or until golden brown. Serve warm.

Tips:

  • Use cold butter and cheese. This will help the biscuits stay flaky and tender.
  • Don't overmix the dough. Overmixing will make the biscuits tough.
  • Use a biscuit cutter that is at least 2 inches in diameter. This will ensure that the biscuits are large enough to be satisfying.
  • Bake the biscuits in a preheated oven. This will help them rise evenly.
  • Serve the biscuits warm. They are best when they are fresh out of the oven.
