¼ cup warm water, divided, plus 1 teaspoon
2 teaspoons active dry yeast
¼ cup sugar
4 cups bread flour
3 teaspoons kosher salt
3 large eggs, divided
8 tablespoons unsalted butter, room temperature
2 tablespoons olive oil
4 yellow onions, thinly sliced through the root end
1 tablespoon kosher salt
½ cup water, divided
½ cup dry red wine, divided
2 large egg yolks
1 garlic, grated
1 teaspoon dijon mustard
½ cup grapeseed oil
¼ cup extra virgin olive oil

  • Add a drop of grapeseed oil and whisk to combine. Continue adding the grapeseed oil, drop by drop, until the mixture begins to thicken and emulsify. Once thickened, add the remaining grapeseed oil in a slow and steady stream, whisking until combined. The mixture should be thick and glossy.
  • Add the olive oil in a slow and steady stream while continuing to whisk.
  • Add the salt and pepper and whisk to combine.

1 (1.25 ounce) envelope onion soup mix
½ cup mayonnaise
2 cups shredded Cheddar cheese
24 dinner rolls, split
½ cup sliced pickles

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
