Steps:
- Preheat oven to 400 degrees Fahrenheit. Grease the cups of a 24-count mini muffin tin with butter or non-stick cooking spray.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the butter to a medium microwave-safe bowl and cook in the microwave on 50% power for 20-30 seconds at a time, just until melted. Add the peanut butter and stir to combine. Add the bananas. Mash the bananas into the peanut butter and melted butter until combined. Stir in the milk, egg, brown sugar, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir with a wooden spoon just until combined. Mix in the chocolate chips.
- Divide the mixture between muffin tins - about 1 1/2 tablespoons batter each. I use a cookie scoop - best invention ever!
- Bake until the tops of the muffins spring back when lightly pressed, 8 - 10 minutes. Remove from oven and let cool in tins for 5 minutes; transfer to a wire rack to cool completely.
- Store at room temperature in an airtight container for 3-4 days. These muffins freeze well, too!

BANANA MINI CHOCO CHIP MUFFINS
Adapted from the Penzey's spices catalog. These are very moist and speckled with tiny bits of chocolate. I fill my muffin tins very full,m so I actually only get 12 large muffins (which require more like 20-25 minutes cooking time), but if you prefer smaller muffins, you will get 16-18 by filling the tins 3/4s full.

- Spoon into muffin tins so they are 3/4 full- you will probably only have enough batter for about 18.
- Bake for 15-18 minutes or until a toothpick tests clean.

- Remove from tins and let cool or serve warm with butter.

Steps:
- 1. In a bowl, blend together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix mashed bananas and the melted butter together. Add the sugar, egg and vanilla, mix well.
- 2. Add the flour mixture to the banana mixture, stir. Add the chopped walnuts. Mix together, but don't over mix.
- 3. Line mini muffin tins with paper liners. Fill each liner 3/4 full. Bake at 350 degrees, for 15 minutes, or until a toothpick comes out clean. Muffins will be lightly browned.
Tips:
- Choosing Ripe Bananas: Select spotty, ripe bananas as they offer a sweeter taste and result in a moist texture.
- Mashing Bananas: Use a fork or a potato masher to achieve a smooth consistency. Avoid using a blender, as it may result in a puree-like texture.
- Measuring Flour: To ensure accurate measurements, use the spoon and level method. Avoid scooping flour directly from the bag, as it can lead to overpacking and dense muffins.
- Mixing the Batter: Do not overmix the batter as it can develop gluten and result in tough muffins. Mix until the ingredients are just combined.
- Muffin Liners: Use parchment paper or silicone muffin liners for easy removal of the muffins after baking. If using regular muffin liners, grease them lightly to prevent sticking.
- Baking Time: Keep a close eye on the muffins during baking. The exact time may vary depending on the oven and muffin size. Insert a toothpick in the center of a muffin; if it comes out clean, they are done.
- Storing Muffins: Allow the muffins to cool completely before storing them in an airtight container at room temperature for up to 3 days or freeze them for up to 2 months.
Conclusion:
These delightful mini banana muffins offer a perfect combination of sweetness, moist texture, and simplicity. With just a few pantry staples and ripe bananas, you can create a delicious and wholesome treat that is perfect for breakfast, snacks, or as a sweet ending to a meal. Whether you enjoy them warm from the oven or savor them later, these mini banana muffins are sure to be a hit with everyone. Try experimenting with different add-ins like nuts, chocolate chips, or dried fruits to create your own unique flavor combinations. Happy baking!
