4 chicken breasts, skin on with drummette
1/2 cup hoisin sauce
1 tablespoon sambal
1 bunch chopped scallions
1/2 cup red wine
1/4 cup minced garlic
1/4 cup minced ginger
1 teaspoon black pepper
1/2 cup fish sauce
1/2 cup rice wine vinegar
1/2 tablespoon chile flakes
1/2 bunch basil chiffonade
1/2 tablespoon sugar
Salt and black pepper to taste
3 cups napa cabbage chiffonade
1 cup carrots shredded
1 cup bean sprouts
1/2 cup scallions chopped

Steps:

  • Mix all ingredients together and marinate chicken, covered and refrigerated at least 4 hours, preferably overnight. On a hot grill, season chicken and cook through, about 8 minutes a side. Be careful not to burn the skin.

3 tablespoons reduced-sodium soy sauce
3 tablespoons sugar
3 garlic cloves, minced

1 pork tenderloin (1 pound)
1/4 cup water
2 tablespoons butter
2 packages (3 ounces each) ramen noodles or 2 cups hot cooked rice
Sliced green onions

Steps:

  • Preheat oven to 475°. Off the heat, mix first 5 ingredients in a small saucepan. Place tenderloin on a greased rack in a foil-lined 15x10x1-in. pan; brush with 1/4 cup hoisin mixture. Roast until a thermometer reads 145°, 15-20 minutes., Stir water into remaining hoisin mixture; bring to a boil. 1 pork tenderloin (cut into 3/4 inch slices)
saltine crackers, made into meal (use a blender or processor)
1 cup water
1 tablespoon bouillon (I use Maggi brand chicken & tomato but any brand or flavor will do. Three of the cube variety work w)
oil (for frying)
4 hamburger buns

Steps:

  • Cut the pork tenderloin into 3/4 inch slices.
  • Pound the slices until each is about 1/4 inch thick.
  • Place the cracker meal in a dish (aluminum pie pans work great).
  • In a second dish, pour in the water and stir in the bouillon.
  • Dip each slice in the bouillon water and then in the cracker meal.
  • Coat well.
  • Deep fry in a fry daddy or deep fryer at 375°F until golden brown. (Pan frying works equally well).
  • Drain.
  • Serve on a hamburger bun with your choice of condiments.

3 cloves garlic, slivered
1/3 cup peanut oil
1/4 cup Bourbon
1 tablespoon Worcestershire sauce
1 tablespoon dried rosemary
1 teaspoon all purpose Greek seasoning
3 dozen yeast rolls, split (homemade or from the grocery deli)
1 cup ketchup
1/2 cup firmly packed dark brown sugar
1/2 cup Bourbon
2 tablespoons Worcestershire sauce
1 1/2 teaspoons all purpose Greek seasoning
1 teaspoon garlic salt

Steps:

  • To make bourbon sauce: In a small bowl, add the bourbon sauce ingredients; stir to combine; set aside.
  • Cut several small slits in the tenderloins; stuff garlic slivers into the slits.
  • In an oblong shallow dish, add the peanut oil, 1/4 cup bourbon, 1 tablespoon Worcestershire sauce, rosemary, and 1 teaspoon Greek seasoning; stir to combine; add the tenderloins; turn to coat.

2 -3 lbs beef tenderloin
1/2 cup butter
1 teaspoon garlic powder
1 teaspoon dry mustard
1/2 lb butter
1 1/2 teaspoons dried parsley
1/2 teaspoon garlic powder

Steps:

  • Bake tenderloin in 200 degree oven for 2 hours, turning & basting with basting mixture every 20 minutes. Will cook to medium rare - 145 degrees.
  • While roasting, slice small silver dollar rolls and spread bun spread mixture on them.
  • When meat is done, let rest at least a half an hour. I've let it sit overnight. Using an electric knife, slice meat into thin slices, piling several slices onto each bun. Put buns on a jelly roll pan lined with parchment paper. Cover with foil and put in fridge until ready to cook. Put a damp towel over buns. Remove foil before you do this and then bake in 350 degree oven for 10-15 minutes.
  • Serve to a party or any kind of gathering and step back for the stampede!
  • If there are any left, freeze individually for quick snacks or small meals. FANTASTIC!
