A layer of apples, a layer of mincemeat and a streusel topping. I am not a huge fan of mincemeat but my father is, so every holiday I make him a mincemeat pie. This one is really Good and it looks as good as it tastes!! I got this recipe out of a "Borden, Home for the Holidays" leaflet years ago.

Number Of Ingredients 10

1 9 in. unbaked pastry shell
3 all-purpose apples, peeled and thinly sliced
1/2 cup unsifted flour, plus
3 tablespoons unsifted flour
2 tablespoons margarine or 2 tablespoons butter, melted
1 (32 ounce) jar ready to use mincemeat (Regular or Brandy & Rum)
1/4 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/3 cup cold butter or 1/3 cup margarine
1/4 cup chopped nuts (I use walnuts)

Steps:

  • In a large bowl, toss apples with 3 Tablespoons flour and the melted margarine; arrange in a pastry shell.
  • (To save time, you can use a frozen pastry shell, thawed).
  • Top apples with mincemeat.
  • In medium bowl, combine remaining 1/2 cup flour, sugar and cinnamon; cut in cold margarine until crumbly.
  • Add nuts; sprinkle over mincemeat.
  • Bake in lower half of 425* degree oven 10 minutes.
  • Reduce oven temperature to 375*; bake 25 minutes longer or until golden brown.
  • Cool.
  • Serve with whipping cream.
  • (Prior to removing your pie from the oven, insert a knife or fork to test the doneness of the apples- I made this pie for Thanksgiving and used 3 different apples, one of them did not cook up as fast as the other two and I had some"crunchy" bites- it was s).

1 1/2 cups mincemeat, Bottled
1/2 cup brown sugar, Packed
1/3 cup butter
1/2 cup orange juice
1 teaspoon orange rind, Finely grated
2 tablespoons dark rum or 2 tablespoons brandy
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 eggs, lightly beaten
3/4 cup walnuts, Chopped or 3/4 cup almonds

Steps:

  • In a 4 cup glass measure or bowl, combine the mincemeat, brown sugar, butter, orange juice, rind and rum.
  • Microwave at high for 3 minutes or until butter is melted and mixture is hot, stirring once.
  • In another bowl, sift together the flour, baking powder, soda and cinnamon.
  • Pour the mincemeat mixture over the dry ingredients along with beaten eggs and nuts; stir until batter is well combined.
  • Lightly grease a 2-quart ring mold or souffle dish and line the bottom with parchment paper, grease the paper.
  • If using souffle dish, invert a greased glass in the centre of dish.
  • Spoon batter evenly into prepared dish.
  • Place an inverted dinner plate in the bottom of microwave and set the dish on the plate.
  • Microwave at medium for 10 minutes.
  • Rotate dish and microwave at high for 2 - 4 minutes more or until top is no longer moist.
  • Let stand on counter top for 15 minutes.
  • Run a knife around the outside of dish.
  • Invert on to a serving plate and let cool completely.
  • To serve, reheat pudding, uncovered at medium for 4 - 6 minutes or until warm.
  • Accompany with Rum Eggnog Sauce.

½ cup white sugar
1 ½ teaspoons baking powder

½ teaspoon salt
1 egg
¼ cup vegetable oil
1 tablespoon orange zest
2 tablespoons orange juice
2 cups prepared mincemeat pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 x 3 inch loaf pan.
  • Mix together the egg, oil, orange peel, juice, and mincemeat, blending well. Combine flour, sugar, baking powder, baking soda, and salt; add gradually to the egg mixture. Mix just until moist. Pour into prepared pan.

175 g plain white flour
1 1/2 tablespoons icing sugar, sifted
100 g butter
cold water
500 g mincemeat
75 g white self raising flour
40 g semolina
40 g caster sugar
75 g butter

Steps:

  • Preheat your oven to 200C/400F/Gas 6. You will need a 12" x 9" (30 x 23 cm) tin.
  • Measure the flour and icing sugar into a mixing bowl and rub in the butter until the mixture resembles coarse breadcrumbs. Add sufficient water to mix to a firm dough. (You can use your processor.).
  • Roll out the pastry to a rectangle slightly larger than the tin, the line the base and sides of the tin with pastry. Trim level with the top edges of the tin and patch any gaps if necessary. Spread the mincemeat evenly over the pastry base.
  • For the topping:.
  • Put the flour, semolina and caster sugar into a mixing bowl. Melt the butter, allow to cool slightly, pour onto the dry ingredients and mix together to form a dough. Chill for 30 minutes, as this will make it easier to grate.
  • Grate the dough using a coarse grater and spread evenly over the mincemeat. Bake in a pre-heated oven for 20 - 25 minutes until golden brown.
  • Cut into 16 evenly sized slices and serve warm with cream or brandy butter.
