MINCEMEAT

Mincemeat image

Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

Time 50m

Yield 24

Number Of Ingredients 15

1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 large green apple, peeled and finely chopped
1 ¼ cups sultana raisins
1 ⅛ cups white sugar
½ cup dried currants
½ cup raisins
½ cup butter
½ cup chopped almonds
1 ½ tablespoons grated orange zest

Steps:

  • Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.

  • Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
  • Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

  • In a food processor coarsely chop mixed dried fruit and dates with spices, salt, and sugar. In a heavy saucepan combine dried-fruit mixture, cranberries, and 2 cups water and cook at a bare simmer, stirring occasionally, 10 minutes, or until fruit is tender (mixture will be very thick). Roll out remaining dough 1/8 inch thick and arrange over filling. Trim dough, leaving a 3/4-inch overhang, and fold overhang under edge of bottom shell, pressing to seal. Crimp edge decoratively.

  • Bake pie in middle of oven until crust is golden, 30 to 35 minutes, and transfer to a rack to cool. Pie may be made 8 hours ahead and kept at room temperature. Serve pie warm or at room temperature.

MY OWN MINCEMEAT PIE FILLING

My Own Mincemeat Pie Filling image

I have used lots of different mincemeat recipes, and created my own, using the most delicious and inexpensive combinations (but really, this recipe is very traditional, nevertheless). You may devise whatever combinations are convenient and inexpensive for you. Throw in whatever's in season, also leftovers you've got (cranberry sauce from Thanksgiving, oatmeal from breakfast, old bread, etc.) Mincemeat will take anything, it seems, and still taste just exactly the same -- that is, exquisite! So for Heaven's sake make whatever changes are thrifty for you, but you may keep the quantities about the same.

Time 1h40m

Yield 8

Number Of Ingredients 15

1 pound ground beef
½ cup ground suet (white beef fat)
4 apples - peeled, cored and chopped
1 cup brown sugar
1 cup brandy
¾ cup raisins, chopped
½ cup walnuts, chopped
½ cup chopped dried mixed fruit
½ cup candied mixed fruit peel, chopped
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground cloves

Steps:

  • Place the ground beef into a skillet over medium heat, and cook and stir until the beef is well browned, about 10 minutes, breaking it up into small crumbles as it cooks. Drain excess fat.
  • In a large cast-iron or other heavy skillet over medium heat, mix the cooked beef, suet, apples, brown sugar, brandy, raisins, walnuts, dried mixed fruit, mixed fruit peel, lemon juice, salt, nutmeg, cinnamon, allspice, and cloves. • Use as mincemeat pie filling.

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter flavor than frozen cranberries, and they will hold their shape better in the sauce.
  • Chop the cranberries coarsely. This will help them to retain their shape and prevent them from becoming mushy.
  • Use a variety of spices. A combination of spices, such as cinnamon, nutmeg, and cloves, will give the sauce a complex flavor.
  • Simmer the sauce on low heat. This will help to prevent the sauce from burning and will allow the flavors to develop.
  • Let the sauce cool completely before serving. This will allow the flavors to meld together and will make the sauce easier to handle.

Conclusion:

Mincemeat cranberry sauce is a delicious and versatile sauce that can be used in a variety of ways. It is perfect for topping pancakes, waffles, or French toast. It can also be used as a filling for pies, tarts, and muffins. Additionally, it can be used as a condiment for roasted meats or poultry. This recipe is easy to follow and produces a delicious sauce that is sure to please everyone at your table. Enjoy!
