3/4 cup packed brown sugar
2 large eggs
3/4 cup mincemeat
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda

1/4 teaspoon ground nutmeg
1-1/2 cups semisweet chocolate chips
1/2 cup chopped walnuts, optional

Steps:

  • In a large bowl, cream the butter and brown sugar. Beat in eggs and mincemeat. Combine the flour, baking soda, cinnamon, salt and nutmeg; add to the creamed mixture and mix well. 125g softened butter
100g dark brown soft sugar
50g golden caster sugar
½ heaped tsp fine sea salt
1 medium egg
1 tsp vanilla extract
5 tbsp mincemeat (check the label if you're vegetarian)
220g plain flour
½ tsp bicarbonate of soda

  • Heat the oven to 180C/160C fan/gas 4. Beat the butter with both types of sugar and the salt. Beat in the egg, vanilla extract and mincemeat. Stir in the flour and bicarbonate of soda, then chill for 20 mins.
