1 1/2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
3 tablespoons vegetable shortening, melted and cooled
1 teaspoon vanilla extract
1 1/3 cups prepared mincemeat
1/2 cup chopped walnuts
powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x5-inch loaf pan.
  • In a large bowl, sift together flour, sugar, baking powder, and salt.
  • In a medium bowl, cream eggs, vegetable shortening, and vanilla extract until light and fluffy.
  • Fold in mincemeat and walnuts.
  • Pour egg mixture into flour mixture.
  • stir until dry ingredients are moistened.
  • Pour batter into prepared loaf pan and bake 55 to 60 minutes or until a toothpick inserted in center comes out clean.
  • Remove from oven and cool on a wire rack 10 minutes.

1 cup mincemeat
1 egg, beaten
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees F, & grease a 9 1/2" loaf pan.
  • Whisk together flour, baking powder & salt.
  • In another bowl, mix together sugar, melted shortening, mincemeat, egg & milk.
  • Add to flour mixture, stirring only until dry ingredients are moistened.
  • Bake 1 hour.
  • Let stand for 24 hours before cutting!

You'll enjoy this even if you're not a mincemeat fan. I'm always looking for mincemeat recipes because my husband is a VERY big fan, I'm not, but I liked this one---it's not overpowering. I got this from a local paper and they say it's from a book called The Best Holidays Ever. I've never tried the jiffy custard sauce that accompanies it but I've included the recipe under that name.

5 cups French bread, cut into 1/2 inch cubes
1 1/2 cups mincemeat
3 eggs
1 (385 ml) can 2% evaporated milk
1 teaspoon vanilla
3/4 teaspoon cinnamon
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup butter

Steps:

  • Lightly grease 9 inch, deep dish pie plate or fluted quiche pan.
  • Layer half the bread cubes over the bottom.
  • Pour mincemeat evenly over the bread.
  • Top with the remaining bread cubes.
  • In a medium bowl, whisk together the eggs, milk, vanilla and cinnamon.
  • Pour over the bread and mincemeat mixture.
  • Let stand 10 minutes, press gently with back of a spoon to moisten the top layer.
  • In a small bowl, combine flour and brown sugar.
  • Using a pastry blender or two knives, cut in the butter until the mixture resembles coarse crumbs.
  • Sprinkle this over the pudding mixture.
  • Bake in a pre-heated 350F oven for 40 minutes or until knife inserted in the centre comes out clean and topping is golden.
  • Let stand 10 minutes before serving with Jiffy Custard Sauce.

1/4 cup Splenda brown sugar blend
1 1/2 cups mincemeat
1/2 cup Egg Beaters egg substitute
1/2-3/4 cup walnuts, chopped

  • Preheat oven to 350 degrees F. and spray a 9 1/2" loaf pan with Pam cooking spray.
  • Mix all ingredients in a bowl stirring only until dry ingredients are moistened. (will be very stiff).
  • Pour batter into prepared loaf pan and bake 50 to 60 minutes or until a toothpick inserted in center comes out clean.
  • Remove from oven and cool on a wire rack 10 minutes.
  • Remove from pan.

1 pkg frozen bread dough rolls thawed
1 jar(s) mincemeat
2 tsp pumpkin pie spices
1/4 c sugar
1 c raisins
1/2 c brown sugar, firmly packed
1/3 c butter

Steps:

  • 1. Combine pumpkin pie spice and sugar in a bowl.
  • 2. Cut each bread dough roll in half and roll in pumpkin pie spce and sugar mixture.
  • 3. Layer in a greased bundt pan. After you completed the bottom layer spoon mincemeat from the jar and layer over the dough.
  • 4. Create another layer just as the bottom layer and layer the mincemeat once again.
  • 5. For the top layer roll the pieces in the sugar and spice mixture and cover and let raise for about 30 minutes.
  • 6. Preheat the oven to 350 degrees. Heat the butter and brown sugar in a sauce pan till it comes to a boil. Layer the raisins on top layer of bread dough and pour the brown sugar mixture over the raisins.
  • 7. Bake for about 30-35 minutes keeping an eye on the top so it does not burn. Enjoy!
