SCOTTISH MINCE PIE
My mother-in-law made this pie in Scotland. It is not a sweet mince pie, but it's easy to make, and a hearty dinner. I serve boiled parsley potatoes and a nice salad with this pie. My children always ask for this pie when they come home to visit.

MINCEMEAT FILLING FOR MINCE PIE
In my family, mince pie has always been as essential for Thanksgiving as pumpkin pie, and we often served it at Christmas, too. I was surprised that I could find no mince pie recipes at Recipezaar, but I suppose most people just go with the bottled mince pie filling. I found this recipe for mincemeat filling on the Crooked Timber group blog website (though I've changed the wording some). It's too late to use Thanksgiving 2004, but I'm storing it here to try next year, if not before. The poster (Harry Brighouse, a philosophy professor) predicts that the recipe will yield "a small pie, a large pie, and a bunch of individual pies." I'm translating that to 3 pies, but since I myself have not made this yet it's only a guess. Sounds yummy, anyway. "Cooking time" is actually minimum steeping time.

APPLE MINCE WALNUT PIE
I came up with this pie several years ago when I was making pies for Christmas and ended up with not quite enough filling for a whole pie. I added mincemeat and walnuts and it was a big hit. This pie is not as intense in flavor as a straight mincemeat pie and even people who are not a big fan of mince pies like it.

Steps:
- In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Divide in half and shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. With floured rolling pin, roll one pastry round into round 2 inches larger than upside-down 10-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
- In 1 1/2-quart saucepan, mix apricots and sugar. Add just enough water to cover apricots. Heat to boiling over medium heat; reduce heat. Simmer uncovered about 20 minutes or until apricots are tender; drain.
- Place apricots in pastry-lined pie plate. Spread with mincemeat. Trim overhanging edge of pastry 1/2 inch from rim of plate.
- Roll other round of pastry. Fold into fourths and cut slits so steam can escape. Unfold top pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute as desired. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
- Bake 35 to 40 minutes or until crust is brown, removing foil for last 15 minutes of baking. Serve warm.

Steps:
- If uncooked meat is used, simmer beef 2 to 3 hours or until very tender, adding suet for last 1/2 hour of cooking. When cooked, chop beef and suet very fine, into about 1/4-inch pieces. Pare, core, and chop apples to make 3 cups. Mix beef, suet, apples, raisins or currants, white and brown sugars, spices, brandy, and cider or apple juice. Prepare the piecrust. Preheat oven to 400 degrees F. Roll out piecrust dough and line pie plates with pastry; fill each with half of meat mixture. Cover with top crusts, seal edges, and slit 2 holes on top for steam to escape. If desired, spread a thick layer of butter on pastry for flaky upper crust. Bake until apples are cooked and meat is heated through, about 1 hour.
Tips:
- Choose the right mincemeat: Good quality mincemeat is essential for a great mince pie. Look for a mincemeat that is made with a variety of fruits, spices, and suet. You can also make your own mincemeat if you prefer.
- Use fresh pastry: Freshly made pastry will give you the best results. If you don't have time to make your own, you can buy good quality ready-made pastry.
- Don't overfill the pies: Overfilling the pies will make them difficult to seal and they may burst in the oven.
- Bake the pies until they are golden brown: The pies should be baked until they are golden brown and the pastry is cooked through. This will usually take around 20-25 minutes.
- Serve the pies warm: Mince pies are best served warm. You can warm them up in the oven or microwave if they have been refrigerated.
Conclusion:
Mince pies are a classic Christmas treat that are enjoyed by people of all ages. They are easy to make and can be tailored to your own taste. With a little care and attention, you can make delicious mince pies that will be the highlight of your Christmas dinner.
