CAKE INGREDIENTS
1 box duncan hines golden butter cake mix
4 eggs, slightly beaten
1/2 c oil
1 can(s) mandarin oranges with juice
FROSTING INGREDIENTS
1 small instant vanilla pudding
1 large crushed pineapple with juice
1 can(s) mandarin oranges, drained
1 small cool whip, thawed

Steps:

  • 1. This cake can be made as a 3 or 4 layer cake or baked in a 9 x 13 pan. Preheat oven to 350. Bake until toothpick inserted comes out clean. The length of time will depend on what type of pans you use. The 9 x 13 pan takes about 30 minutes, the layers take less time.
  • 2. Prepare cake pans by spreading a thin film of shortening and then coating with flour by putting about a tablespoon in the pan and then rotating it to cover.
  • 3. Beat all cake ingredients in a large bowl for 4 minutes. Pour batter in prepared pan or pans and put in oven. Once cooked remove from oven and cool 5 minutes then remove from pans and place then on wire racks to cool. This doesn't need to be done with the 9 x 13 pan, only the layers.
  • 4. For the frosting make sure the mandarin oranges are completely drained. Mix pudding mix with the Cool Whip, stir in the oranges and then the crushed pineapple with the juice. Frost the cake as desired. Keep leftovers in the ice box, there won't be many!
