1 pint maine wild blueberries
1/3 cup water
1 cup white sugar
1 teaspoon grated lemon rind
1 cup flour
1/4 cup brown sugar
1 teaspoon baking powder
1 1/2 tablespoons cinnamon
1/3 cup butter

Steps:

  • Preheat oven to 350 degrees. Combine Maine wild blueberries, 3/4 cup white sugar, water, and lemon rind in a baking dish. Bring to boil and simmer for 2 minutes. Meanwhile, combine reserved 1/4 cup white sugar with brown sugar, flour baking powder, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle crumbs over blueberry mixture. Bake approximately 25 minutes or until top is brown. Serve warm with heavy cream or vanilla ice cream.

Anything that is "of Maine" takes my eye. This did and I tried it years ago and it was delicious. I use the frozen Maine wild blueberries, as I think that they are the very best in the world.

Number Of Ingredients 7

2 cups blueberries (frozen or fresh)
3/4 cup sugar
1 1/2 tablespoons flour
1/8 teaspoon salt
1/2 teaspoon cinnamon (optional)
1 teaspoon lemon juice (optional)
1 tablespoon butter

Steps:

  • Line an 8" pie plate with crust.
  • Pour in the blueberries.
  • Mix together the rest of the ingredients and scatter over the blueberries.
  • Dot with pieces of the butter.
  • Put the top crust on.
  • Bake at 450 dgrees for 10 minutes; then reduce to 350 degrees and continue baking for another 35-40 minutes or till done.

2 cups fresh blueberries
sugar
1 teaspoon grated lemon rind
3/4 cup water
3 tablespoons butter
1 egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon nutmeg
1/3 cup milk

Steps:

  • Pick over and wash berries. Place in saucepan with 1/4 cup sugar, lemon rind and water.
  • Bring to a boil and simmer for 5 minutes. Pour equal amounts into 4 greased tart pans.
  • Cream butter, 1/3 cup sugar, egg and vanilla until well blended.
  • Mix flour, baking powder, salt and nutmeg. Add to creamed mixture along with the milk. Beat until smooth. Spoon batter over hot blueberries.
