1/2 cup honey
1/3 cup vegetable oil
3 large eggs
2 cups buttermilk
1 cup wheat bran
3 cups all-purpose flour
2 1/2 teaspoons baking soda
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 375.

  • Using a brush, coat bottom and sides of muffin tins.
  • MUFFINS.
  • Mix fruit, honey and oil until smooth.
  • Beat in eggs, then buttermilk and bran.
  • Sift flour, baking soda and salt together.
  • Add to mixture and beat until just combined.
  • Fill tins 3/4 full.
  • Bake for 20 - 25 minutes until springy to the touch.
  • Cool for 2 minutes then invert on rack to cool completely.

Tips:

  • Use overripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be.
  • Mash the bananas thoroughly. This will help to ensure that they are evenly distributed throughout the batter.
  • Do not overmix the batter. Overmixing can result in tough muffins.
  • Fill the muffin cups only about 2/3 full. Overfilling the cups can result in messy muffins that overflow during baking.
  • Bake the muffins at a moderate temperature. A temperature of 350 degrees Fahrenheit is ideal.
  • Do not overbake the muffins. Overbaking can result in dry, crumbly muffins.
  • Let the muffins cool completely before frosting them. This will help to prevent the frosting from melting.

Conclusion:

Mimi's banana muffins are a classic recipe that is sure to please everyone. With their moist, flavorful crumb and sweet, creamy frosting, these muffins are perfect for breakfast, lunch, or a snack. They are also a great way to use up overripe bananas. So next time you have some bananas that are past their prime, be sure to make a batch of Mimi's banana muffins. You won't be disappointed!
