1 1/3 cups sugar
1/2 cup shortening
1/2 cup butter, softened
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar

Steps:

  • Heat oven to 350°F. In large bowl, combine 1 cup of the sugar, shortening and butter; beat until light and fluffy. Add vanilla, almond extract and egg; blend well. Add flour, baking soda and cream of tartar; mix well.
  • Shape dough into 1-inch balls. Roll balls in remaining 1/3 cup sugar; place 2 inches apart on ungreased cookie sheets. With bottom of glass dipped in sugar, flatten balls to 1/8-inch thickness.
  • Bake at 350°F. for 7 to 12 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.

2 cups solid shortening
1 cup sugar
1 cup brown sugar
2 teaspoons vanilla
2 eggs
1 teaspoon baking soda
1 teaspoon salt
4 cups flour
1/2 cup sugar (for top of cookies)

Steps:

  • Cream together the first four ingredients until smooth.
  • Add baking soda and salt.
  • Add flour one cup at a time and mix until well blended.
  • Using a soup spoon, scoop out some dough and place it in your palm. Using both hands, roll into a ball and place on a cookie sheet, leaving room for it to spread.
  • Once you have filled the sheet with balls, place 1/2 cup sugar into a little container, and dip the bottom of a drinking glass into it and use it to flatten dough balls. Flatten each ball until it is about 1/3 inch thick. Dip the glass into the sugar again after you flatten each ball.
  • Bake at 350 degrees for 10 minutes.

2 cups crisp rice cereal

This cookie is to die for very good with a tall glass of milk or cup of coffee. I had these cookies years ago at my families house during a passing away which everyone brought something and I had to have the recipe. I never changed it and it was a comfort food at that time. I make these when I need a warm feeling in my soul.

1 c butter, softened
1 c whie sugar
1 c brown sugar, firmly packed
2 eggs room temperture
1 tsp vanilla
2 c all purpose flour
1 tsp baking soda
2 1/2 c oatmeal, uncooked and finely blended
12 oz chocolate chips
1/2 tsp salt
4 oz hersheys choc. bar (grated)
1 tsp baking powder
1 1/2 c chopped walnuts

Steps:

  • 1. Measure oatmeal and blend in blender to a fine powder and set aside. In large bowl put butter and both sugars and mix with a fork. Add eggs and vanilla and mix till blended with fork.
  • 2. In another bowl combine flour,oatmeal,salt,baking powder, baking soda Combine this with the egg mixture but now use a strong spatula or metal spoon this will make the batter hard to mix. Once this is mixed well its time to add your choc. chips and grated Hershey and nuts.
  • 3. The batter will be hard to mix but I have faith you can do it. Once all mixed I put mine in frig. to get cold for easy handling about 20 mins. Once it is cold shape into balls, I use a medium size cookie scoop .
  • 4. Place 2" apart on greased cookie sheet and bake for 10-12 mins. pending on your oven. Bake at 350* The cookie will be slightly brown on bottom and soft to the touch on top which is what you want. Take out and put on wire rack or wax paper. In one batch I got 80 cookies. Or just roll your own.
