2 lb ground beef (preferably not lean ground beef)
4 slices of fresh bread (food processed)
1/3 cup beef broth (I used Better Than Bouillon Beef Base**BE SURE TO READ NOTES BELOW)
1 1/2 tbsp Worcestershire sauce
2 eggs (lightly beaten)
1 pinch ground thyme (*see seasoning notes )
2 pinches dry parsley
1 tbsp vegetable oil
4 garlic cloves (minced)
2 cups red onion diced
salt (for taste)
pepper (for taste)
1/2 cup ketchup
4 tbsp light brown sugar (about 4-5 tablespoons)
2 tsp pepper (optional)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Cover the entire top and sides of a baking sheet with heavy-duty aluminum foil. See notes. Fill a baking sheet or sheet pan with water and place it on the very bottom shelve in the oven. *See notes.
  • Add the vegetable oil to a medium skillet over medium heat. Once the oil is hot, enough add the onions and cook until softened about 6-8 minutes. A minute before the onions are done, add the garlic.
  • Cook until fragrant (about 30 seconds). Remove the onions and garlic from the skillet and let it cool for about 5 minutes.
  • To a small bowl add the fresh breadcrumbs, eggs, Worcestershire sauce and beef broth. Mix gently. Let the breadcrumbs soak for 5 minutes.
  • To a bowl add the ketchup, pepper and brown sugar. Mix well. Reserve for later.
  • Use a bowl big enough for the ground beef and breadcrumb mixture. Add the ground beef to the bowl with all the seasonings, salt, and pepper. Add the breadcrumb mixture, onions and garlic and gently mix.
  • For an easy clean up (optional) place the loaf on the baking sheet lined with heavy-duty aluminum foil or line it with parchment paper. Shape the beef into a loaf. Pour only half of the brown sugar ketchup over the meatloaf. Put the meatloaf on the shelf right above the pan with water.

Steps:

  • Preheat oven to 375 degrees Fahrenheit.

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves

1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. 2 pounds lean ground beef

1/2 cup milk

1/4 cup barbecue sauce
1 tablespoon well-drained horseradish
1/4 cup finely chopped flat-leaf parsley
1 teaspoon salt

Steps:

  • For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.
  • In a large mixing bowl, combine ground beef, eggs and milk. Mix well by hand, and add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onions and garlic. Mix again, and add the parsley, salt, pepper and thyme. Mix well until thoroughly combined.

  • For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
  • To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.

• 1 3/4 cups fresh sourdough bread crumbs (see note)
• 1 1/2 pounds lean ground beef
• 3/4 pound sweet Italian sausage, casings removed and discarded
• 2 eggs, lightly beaten
• 1/3 cup minced fresh parsley
• 3/4 cup grated parmesan cheese
• 1 teaspoon minced fresh thyme or 1/2 teaspoon dried
• 3 ounces sliced prosciutto
• 1/2 pound thinly sliced havarti cheese
• 1 1/4 cups fresh basil, cut into thin strips
• 1/3 cup drained oil-packed sun-dried tomatoes, cut into strips
• Sprigs of fresh basil (optional)

Steps:

  • Place oven rack in middle position. Preheat oven to 350 degrees. For easiest cleanup, line a jellyroll pan with parchment paper. Aluminum foil will work, but you must remove the meatloaf from the pan within 4 or 5 minutes of removing it from the oven, or it may stick to the foil. Heat oil and butter in a large skillet. Add onion and cook on medium-high heat until softened, about 4 minutes. Add garlic and mushrooms; cook until mushrooms are soft and liquid has evaporated. Season to taste with salt and pepper; set aside to cool slightly before proceeding. In a large bowl, combine bread crumbs, cooled mushroom mixture, ground beef, sausage, eggs, parsley, cheese, thyme and a little pepper. Gently mix by hand. To taste your meat mixture, pull out about 1 tablespoon and microwave it for about 1 minute or until it is cooked. Allow it to cool enough so you can taste it. Correct seasonings if necessary. Gently pat meat mixture into a 10-by-15-inch rectangle on a sheet of wax paper. With a longer end facing you, layer the prosciutto, cheese, fresh basil and sun-dried tomatoes on the bottom two-thirds of the meat. Grab the edge of the wax paper closest to you and roll up the loaf. Once meatloaf is rolled up, seal ends and press down slightly to seal lengthwise seam. Place seam side down on prepared jellyroll pan. (Meatloaf can be refrigerated at this point and cooked later.) Bake, uncovered, for 65 minutes or until the center of the meatloaf registers 160 degrees on a meat thermometer. Note: To make fresh bread crumbs, tear the bread into fourths and place in food processor fitted with the metal blade. Process until medium-size bread crumbs are formed. This process also can be accomplished in a blender, but with smaller quantities.
