Millie's Pecan Pie image

While digging through my recipe card, I ran across my belated friend Millie's Pecan Pie. She introduced me into the world of pies and pastries in the 70's. She passed away from Lou Garrets disease. So I will post this in memory of Millie and any other person that is facing the battle of any disease. Gone but never forgotten! ...

MILLIE'S COOKIES RECIPE

Millie's Cookies recipe image

These delicious cookies are easy to cook and taste as good as the real Millies cookies, with a crisp outer layer and a gooey centre these treats are best eaten warm but last well...if they last that long!!!

Provided by alice1211

Time 15m

Yield Makes Cookies

Number Of Ingredients 8

125g butter, softened
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
200g chocolate chips

Steps:

  • Preheat the oven to 180°C, gas mark 4
  • Cream butter and sugars, once creamed, combine in the egg and vanilla.
  • Sift in the flour and salt, then the chocolate chips.
  • Roll into walnut size balls, for a more homemade look, or roll into a long, thick sausage shape and slice to make neater looking cookies.
  • Place on ungreased baking paper. If you want to have the real Millies experience then bake for just 7 minutes, till the cookies are just setting - the cookies will be really doughy and delicious. Otherwise cook for 10 minutes until just golden round the edges.
  • Take out of the oven and leave to harden for a minute before transferring to a wire cooling rack. These are great warm, and they also store well, if they don't all get eaten straight away!

Tips:

  • Use fresh fruit: Fresh fruit will give your pie the best flavor. If you can't find fresh fruit, you can use frozen or canned fruit. Just be sure to drain the canned fruit well before using it.
  • Don't overmix the dough: Overmixing the dough will make it tough. Mix it just until the ingredients are combined.
  • Chill the dough before rolling it out: Chilling the dough will make it easier to roll out and prevent it from shrinking in the oven.
  • Preheat your oven: Preheat your oven to the correct temperature before baking the pie. This will help the pie bake evenly.
  • Don't overbake the pie: Overbaking the pie will make the crust dry and the filling runny. Bake the pie just until the crust is golden brown and the filling is bubbling.

Conclusion:

With these tips in mind, you're sure to make a delicious August pie that everyone will love. This pie is perfect for any occasion, from a casual get-together to a special holiday dinner. So next time you're looking for a delicious and easy-to-make dessert, give Millie's August pie a try.
