2 large eggs
300ml milk
1 tbsp butter , melted, plus more for the pan
1 lemon , zested
250g mascarpone
250ml double cream
50g sugar
115g caster sugar
2 lemons , juiced

  • Put the flour, eggs, milk, 1 tbsp melted butter and a pinch of salt in a bowl or large jug, then whisk to a smooth batter.
  • Set aside for 30 mins to rest if you have time, or start cooking straight away.
