Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 14

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 pinch fine salt
1/3 cup caster or 1/3 cup superfine sugar
80 g/ 2 . 82ozs . butter, softened
1 small egg
2 cups milk
1 cinnamon stick
60 -100 ml white sugar, depending on personal taste
2 eggs
3 tablespoons cornflour
3 tablespoons flour
half teaspoon vanilla essence
2 tablespoons butter

Steps:

  • Crust - Step 1 - Measure the flour, baking powder and salt in a jug and whisk until combined. Cream butter and sugar together with a beater attachment until pale and fluffy (about 3 minutes). Add the egg and beat until thoroughly incorporated. By hand add in the flour mixture and mix until just combined.

  • Lightly beat the eggs with the sugar, and then add the corn flour and flour.
  • Pour the hot milk into this mixture, stirring rapidly.

  • Take the mixture off the heat and add the vanilla essence and butter.
  • Stir well until the butter is melted.
  • Pour the mixture into the prepared tart crust.
  • Sprinkle with cinnamon sugar.

SOUTH AFRICAN MELKTERT OR MILK TART (CUSTARD PIE)

South African Melktert or Milk Tart (Custard Pie) image

This traditional South African Melktert or Milk Tart is a variation of an egg custard pie which originated with the Dutch settlers who came South Africa in the 17th Century. Melktert was then adapted and made a purely South African creation by the Cape Malays. Apparently wives reputations hang on their Melkterts and recipes are family heirlooms. So, for something exotic and a bit different, give this a try.

MILK CHOCOLATE-PISTACHIO TART

Milk Chocolate-Pistachio Tart image

You'll find pistachios everywhere in this dessert -- embedded in the crust, in a paste layered beneath the milk-chocolate filling, and in a dusted coating on top. Martha prepared this recipe in Episode 501 of "Martha Bakes."

Time 3h

Yield Makes one 9-inch tart

Number Of Ingredients 17

Vegetable oil cooking spray, for pan
3/4 cup all-purpose flour, plus more for surface
1/4 cup unsweetened cocoa powder
1/3 cup unsalted shelled pistachios, chopped
1/4 teaspoon salt
1 stick unsalted butter, room temperature
1/4 cup sugar
1/2 teaspoon pure vanilla extract
1/2 cup unsalted shelled pistachios, preferably Sicilian
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon safflower oil
5 ounces milk chocolate, chopped
1/2 cup heavy cream
1/4 cup whole milk
1 large egg, beaten
Garnish: finely chopped pistachios (optional)

Steps:

  • Coat a 9-inch fluted round tart pan with a removable bottom with cooking spray. Make the crust: Whisk together flour, cocoa powder, chopped pistachios, and 1/4 teaspoon salt. Beat butter on medium speed until fluffy, about 3 minutes. Add sugar, and beat until pale, about 2 minutes. Reduce speed to low, and add vanilla, then flour mixture; beat until just combined and dough holds together when pressed between 2 fingers. Press dough into a disk, and wrap in plastic. Refrigerate for 15 minutes.
  • Roll out dough to an 11-inch round, 1/4 inch thick on a lightly floured surface. Press dough into bottom and up sides of tart pan. Trim excess dough flush with edges of pan using a knife. Refrigerate until firm, at least 1 hour or overnight. Meanwhile, preheat oven to 325 degrees.
  • Bake until firm, about 30 minutes. Let cool completely; reduce oven temperature to 300 degrees.
  • Meanwhile, make the pistachio paste: Pulse pistachios, sugar, and 1/4 teaspoon salt in a food processor until mixture begins to clump together. Add oil, and pulse until smooth and pastelike. Spread evenly into bottom of cooled tart shell, pressing firmly with the bottom of a measuring cup until flat and smooth.
  • Make the filling: Place chocolate in a heatproof bowl. Heat cream and milk in a saucepan over medium heat until almost boiling; pour over chocolate. Let stand for 2 minutes. Slowly whisk until smooth. Let cool for 10 minutes. Stir in egg until combined. Place tart shell on a baking sheet, and pour in filling. Bake until just set, 30 to 35 minutes. Let cool. Garnish with finely chopped pistachios.

SOUTH AFRICAN CRUSTLESS MILK TART

South African Crustless Milk Tart image

This desert recipe was given to me by my South African friend Sheralee. I haven't tried it yet, but it sounds delicious. Posted for ZWT 4.

Provided by Enjolinfam

Categories     Tarts

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 8

3/4 cup self-raising flour
2 cups milk
2 eggs
3/4 cup sugar
1 teaspoon vanilla essence
1 ounce butter, melted
1 pinch salt
1/2 teaspoon cinnamon

Steps:

  • Put all the ingredients together into a bowl or food processor and beat to a smooth batter.
  • Pour into a buttered pie dish (approximately 23cm/9" in diameter, but it doesn't matter if it's not exact, the finished tart will just be either a bit deeper or shallower). Sprinkle the cinnamon over the top.
  • Bake for 45 minutes at 175C / 350°F
  • Serve warm or cold. It sinks and becomes denser as it cools. If you eat it hot you'll need a spoon to scoop up the soft custardy tart but cold you can pick up the slices in your hand, if it hasn't vanished long before then. :).

MILK TART

Milk Tart image

My family fell in love with this simple, lightly sweet dessert, which is a regular with South African cuisine.

Provided by Jenn Visser

Categories     Pies

Time 50m

Number Of Ingredients 10

1 Deep dish pie crust
2 eggs, separated
1/4 tsp cream of tartar
2 1/4 c milk
1/4 c sugar
3/4 c cake flour
1/2 tsp salt
2 Tbsp butter
1 tsp vanilla
1/2 tsp cinnamon

Steps:

  • 1. Combine egg whites and cream of tartar. Beat with an electric mixer till soft peaks form, then set aside
  • 2. Combine milk and sugar in a medium sauce pan over medium heat until warm
  • 3. Ladle out about a cup of warmed milk into a bowl with the sifted flour. Whisk smooth and then add to sauce pan with rest of milk.
  • 4. Add egg yolks and salt to sauce pan, stirring to combine.
  • 5. Raise heat to medium high, bringing mixture to boil. Stir frequently, until thickened. About 10 minutes.
  • 6. Remove from heat, add butter and vanilla. Let it sit for 5 minutes to cool.
  • 7. Fold in egg whites and pour into pie crust.
  • 8. Sprinkle with cinnamon and bake for 30 minutes at 375 degrees until filling is firm.

Tips:

  • Use high-quality ingredients: This will ensure that your milk tart is delicious and flavorful. Use full-fat milk and butter, and fresh eggs.
  • Don't overwork the dough: Overworking the dough will make it tough. Mix it just until it comes together, then wrap it in plastic wrap and chill it for at least 30 minutes before rolling it out.
  • Blind-bake the pastry crust: This will prevent it from becoming soggy. To blind-bake the crust, preheat your oven to 350 degrees Fahrenheit. Line the pie pan with parchment paper and fill it with pie weights or dried beans. Bake for 15-20 minutes, or until the crust is golden brown.
  • Use a custard filling that is thick and creamy: A thin custard filling will make your milk tart runny. Make sure your custard is thick enough to coat the back of a spoon before you pour it into the pie crust.
  • Bake the milk tart until the custard is set: The custard should be set, but still slightly wobbly. If you overbake the milk tart, the custard will become dry and overcooked.
  • Let the milk tart cool completely before serving: This will allow the custard to firm up and the flavors to meld.

Conclusion:

Milk tart is a delicious and classic South African dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its creamy custard filling and flaky pastry crust, milk tart is sure to be a hit at your next party or gathering.
