For the Caramel:
4 ounces water (1/2 cup; 115g)
8 1/2 ounces sugar (1 1/4 cups; 240g)
3/4 teaspoon (3g) Diamond Crystal kosher salt; for table salt, use half as much by volume or use the same weight
6 ounces heavy cream (3/4 cup; 170g)
For the Chocolate Coating:
8 ounces finely chopped dark or milk chocolate (1 1/3 cups; 225g), such as Callebaut or Valrhona; do not use chips

Steps:

  • For the Caramel: Nestle a large sheet of parchment paper into an 8-inch cake pan to roughly cover the bottom and sides. In a 2-quart stainless steel saucier, combine water, sugar, and salt over medium heat. Stir with a fork until sugar is fully dissolved and syrup comes to a rolling boil, about 4 minutes. Simmer, without stirring, until syrup is honey-gold, roughly 7 minutes. Immediately add cream and reduce heat to medium-low, adjusting the heat lower if needed to keep caramel from foaming too high. (This is more likely on an electric stove due to residual heat.) Stirring constantly with a heat-resistant spatula, simmer until caramel registers 260°F (127°C) on a digital thermometer, about 7 minutes. Immediately pour into prepared pan, cover tightly with foil, and cool to room temperature, about 2 hours.
  • Peel caramel from parchment, transfer to a cutting board, and cut into 50 pieces (approximately 1/4 ounce or 7g each) with a sharp knife; don't worry about being too precise with their shape or size. If you like, use your fingers to mold the pieces into a more oval, Milk Dud-like shape.
  • For the Chocolate Coating: Line a baking sheet with parchment. Temper chocolate according to one of the methods described here . Fold all caramel pieces into tempered chocolate. With a clean hand, scoop up pieces like handfuls of marbles, then slide each one over your index finger with your thumb into your other hand (think of how you'd dole out a handful of M&M's) and arrange on prepared baking sheet. Let stand at room temperature until fully set, about 15 minutes, then transfer to an airtight container.

6 egg whites,beaten
6 egg yolks, beaten
1 c crushed rusk
1 tsp baking powder
1 tsp vanilla
1/2 c nuts
1 c cool whip
3 oz 5 ounce pkg. milk duds
1/3 c milk
2 Tbsp butter
1 c powdered sugar

Steps:

  • 1. Mix together egg yolks,sugar,rusks,baking powder,and vanilla. Then fold in beaten egg whites. Add nuts. Put in a 9x13 greased pan. Bake at 325 for 30 minutes. Cool. Spread 1 C. cool whip on top. Melt milk duds, milk, butter and powdered sugar. Cool. Then spread on top with cool whip.

2 boxes devils food cake mix
12 ounces evaporated milk
½ cup butter - melted (1 stick )
2 cups Milk Duds
2 cups milk chocolate chips

Steps:

  • Preheat the oven to 350 degrees and spray a 9x13 glass baking pan with cooking spray. Set aside.
  • Mix the cake mix, evaporated milk and melted butter in a mixer - beating well.
  • Add 1 cup of the milk duds and 1 cup of the chocolate chips - beat well.
  • Transfer ¾ of the batter to the prepared pan and spread out flat in the bottom as best you can. It's very sticky. You can wet your hands to make it stick a bit less or use a rubber spatula coated in cooking spray.
  • Bake for 10 minutes, then remove.
  • Top with remaining milk duds & chocolate chips.
  • Drop the remaining batter on the top in spoonfuls- do not spread out - leave it chunky.
  • Return to the oven and bake for another 40-45 minutes.
  • Check with the toothpick test- it should be mostly clean.
  • Remove and allow to cool completely before cutting.
  • Store at room temperature in an airtight container.

This recipe was given to me by my mother. It was a family favorite and is kind of unusual, but delicious.

6 eggs, separated
1 c white sugar
1 c holland rusk or graham cracker crumbs
1/2 c finely chopped walnuts
1 tsp baking powder
1 tsp vanilla extract
1/2 pt whipping cream (not cool whip)
5 box milk duds candies
1/2 c evaporated milk
1 c sifted powdered sugar
2 Tbsp margarine

Steps:

  • 1. Separate the 6 eggs. Beat the 6 egg whites until stiff & set aside. Beat the yolks until thick & lemony. Gradually add 1 cup of sugar. Add 1 cup of the rusk (or graham cracker) crumbs and 1/2 cup walnuts. Add 1 tsp. baking powder and 1 tsp. vanilla. Mix well. Fold in the beaten egg whites. Pour mixture into a greased 9 X 13 pan and bake at 350 degrees for 30 minutes. Set aside to cool. In a heavy, non-stick sauce pan or double boiler, melt the Milk Duds with the 1/2 cup evaporated milk. Add the powdered sugar and 2 Tbsp. margarine. Cool completely. Beat the whipping cream until very thick. Spread over the cooled cake. Then drizzle the Milk Dud (cooled) mixture over the top of the whipped cream. There will be a LOT of Milk Dud mixture, but cover the whole thing. Refrigerate overnight.
