HOMEMADE MILD CURRY POWDER AND PASTE.

Homemade Mild Curry Powder and Paste. image

This curry powder/paste is the result of an afternoon creating a curry that would keep my non curry headed friends happy but not bore the others. I really recommend a spice grinder as the flavour of freshly ground spices is just so much better than store bought powders. Keep the powder in the fridge to help retain the flavours longer. The powder should be enough for a minimum of 10 curries.

SIMPLE, SWEET AND MILD CURRY BLEND

Simple, Sweet and Mild Curry Blend image

This curry blend is made from everyday ingredients found in most people's kitchens. I usually like alot of "heat" in my curry powder, but this is a great substitute for Indian flavor, without too much "fire" from red chilis or cayenne. Can be used in any recipe that calls for curry powder.

2 teaspoons ground coriander
2 teaspoons turmeric
1 teaspoon cumin
1 teaspoon cinnamon

1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional)

Steps:

  • Combine all ingrediendts, and store in a glass or plastic container with a tight fitting lid.
  • **Note:I crush my fennel seeds in a mortal and pestle, but it you place the seeds in a ziplock bag and crush with a rolling pin, it works just as well.
  • This recipe makes"just about" 1/4 cup of spice.

Tips:

  • Homemade curry powder provides full control over the final flavor and heat level, allowing customization to your specific preferences.
  • Freshly toasted and ground spices yield a more robust and flavorful curry powder compared to pre-ground store-bought options.
  • Experiment with different spice ratios to create a unique blend that suits your taste. Consider adjusting the proportions of cumin, coriander, turmeric, and other spices to achieve your desired flavor profile.
