Time 3h10m

Yield Approximately 5 cups

Number Of Ingredients 10

Two 15-ounce cans diced tomatoes
One 10- or 15-ounce can diced tomatoes with green chiles
1/4 cup fresh lime juice
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground black pepper
1 to 3 (depending on your heat tolerance) chipotle peppers in adobo (see Cook's Note)
1 bunch fresh cilantro, stems roughly removed
1 medium onion, diced

Steps:

  • Add the diced tomatoes, diced tomatoes with green chiles, lime juice, cumin, salt, sugar, black pepper, chipotle peppers, cilantro and onions to a food processor and blend until totally combined. Give it a taste to check for seasoning.
  • Make the salsa several hours before serving, as it will give the flavors a chance to dance! Keeps in the fridge, covered, for about a week.

Tips for Making the Best Chipotle Salsa:

  • Use ripe tomatoes: Ripe tomatoes have a sweeter, richer flavor that will make your salsa more delicious. If you can, use tomatoes that are in season and locally grown.
  • Roast your tomatoes: Roasting your tomatoes before making salsa will intensify their flavor and give your salsa a smoky, complex flavor.
  • Use fresh cilantro and lime juice: Fresh cilantro and lime juice are essential for adding brightness and acidity to your salsa. Don't skimp on either of these ingredients.
  • Add a little heat: Chipotle peppers are a great way to add a little heat and smokiness to your salsa. If you don't like spicy food, you can omit the chipotle peppers or use a milder variety.
  • Let your salsa rest before serving: Letting your salsa rest for at least 30 minutes before serving will allow the flavors to meld together and develop.

Mike's Chipotle Salsa is a delicious, versatile salsa that can be used as a dip, condiment, or marinade. It's perfect for parties, picnics, or everyday meals.
