Heavenly spread for meat, fish, sandwiches, and burgers. They serve this at my favorite Middle Eastern restaurant. Finally got the recipe! This is heaven as a dip with pita bread, but everyone in your party has to have some. Serious garlic!

Number Of Ingredients 5

3 small russet potatoes, peeled
1 head garlic, peeled and crushed
1 ½ teaspoons salt
⅓ cup lemon juice
½ cup canola oil

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer to a bowl; mash until smooth. Set aside to cool.
  • Put garlic, salt, and lemon juice in a blender or food processor; pour in enough oil to lightly coat garlic cloves. Blend mixture on high; slowly stream remaining oil through the top opening of the blender or food processor until mixture is smooth. Add mashed potatoes, about 2 to 3 tablespoons at a time, to the garlic mixture while blender is still running. Continue adding potatoes until all are incorporated. Transfer sauce to a bowl and refrigerate until chilled, 1 hour to overnight.

I've hunted for years to find a Garlic Sauce like the one that used to be served in my favorite Middle Eastern restaurant with Shawarma. I combined a couple different recipes and EUREKA!! If you love a good Garlic Sauce, be warned.. you may also be eating this on EVERYTHING until it is gone !!

1 head garlic
1/4 cup milk (optional)
1/2 teaspoon lemon juice
2 tablespoons extra virgin olive oil or 2 tablespoons vegetable oil
2 tablespoons heavy cream (optional)
1 slice white bread, crusts removed
1/2 teaspoon salt (to taste)

Steps:

  • Separate garlic into cloves and peel. I simmered the cloves in milk in a small saucepan for 5 minutes to take a little of the bitterness out. Feel free to skip this step if you like.
  • Add garlic and remaining ingredients in food processor and blend until smooth. Keeps quite a few days refridgerated in a sealed container. Great with any kind of grilled meat, on sandwiches, with veggies, pizza -- pretty much anything!
  • NOTE: I happened to have some cream so I added it, just to give it a bit of extra creaminess. I'm sure it would be just fine without it, as none of the recipes I referred to called for it.

1/4 tsp salt
1 cup canola oil
1/4 cup lemon juice
1 egg white

  • In a food processor add garlic minced with salt, begin processor and slowly add oil and lemon juice alternating them until gone, scape down sides intermittently. Add one to two egg whites while the processor is blending until you reach mayonnaise consistency.

Tips:

  • For a smoother sauce, blend the garlic and oil mixture in a blender or food processor until it reaches your desired consistency.
  • If you don't have fresh lemon juice, you can use bottled lemon juice instead. Just be sure to use 100% lemon juice and not a lemon-flavored drink.
  • If you want a spicier sauce, add a pinch of cayenne pepper or red pepper flakes.
  • This sauce is best served fresh, but it can be stored in the refrigerator for up to 3 days.
  • Serve this sauce with grilled meats, vegetables, or pita bread.
