4 tablespoons butter or 4 tablespoons margarine, melted
4 medium baking potatoes, peeled and cubed
1/2 cup grated parmesan cheese
1 teaspoon seasoning salt
1/2 teaspoon pepper
dried parsley flakes

Steps:

  • In a microwave-safe dish, add potatoes and toss with butter to coat.
  • Sprinkle with Parmesan cheese, seasoned salt and pepper and toss.
  • Cover and microwave on high for 6-8 minutes or until tender, turning once.
  • Let stand for 5 minutes.
  • Sprinkle with parsley.

2 Tbsp margarine
2 medium potatoes, unpeeled, sliced 1/4" thick
1/3 c chopped onion
1 clove garlic minced
1/2 c green pepper--diced
1/4 tsp salt
1/8 tsp pepper
1/4 c grated parmesan cheese
paprika
chopped parsley

Steps:

  • 1. Melt margarine in shallow 9" microwave dish. Add potatoes, onion and garlic. Toss. Cover loosely with seran and place in microwave on full power for 5 minutes.
  • 2. Stir in green pepper, salt and pepper: Toss, cover with loose ceran and microwave on full power 3 minutes.
  • 3. Gently mix in cheese. Toss gently and dust with paprika. Microwave on full power, uncovered, 3 minutes. Let rest 2 minutes. Sprinkle with parsley.
