Categories     Potato     Side

Yield 5-6 servings

Number Of Ingredients 6

3-4 c. chunky hash browns
½ c. chopped green onions
½ t. pepper
½ t. celery salt
4 T. Parmesan cheese
3 T. margarine

Steps:

  • Microwave the hashbrowns until they are cooked. Stir in remaining ingredients and microwave until warmed through. * If making in oven, substitute 4 potatoes cut into bite-sized pieces for the hashbrown potatoes. Preheat oven to 350 degrees. Mix all ingredients together and bake for 1 hour.

Tips:

  • Select the Right Potatoes: Choose small to medium-sized potatoes, ideally of the red or yellow variety, for even cooking.
  • Thoroughly Clean the Potatoes: Scrub the potatoes well under running water to remove any dirt or debris.
  • Use a Food Processor for Quick Slicing: If you don't have a mandoline, use a food processor equipped with a slicing blade to quickly and evenly slice the potatoes.
  • Uniform Potato Thickness: Aim for slices of uniform thickness, around 1/8 inch or 3 millimeters, to ensure even cooking.
  • Toss the Potatoes in Olive Oil: Coating the potato slices in olive oil helps them crisp up beautifully in the microwave.
  • Add Garlic Salt and Parmesan: The combination of garlic salt and Parmesan cheese adds a savory and cheesy flavor to the potatoes.
  • Season to Taste: Don't be afraid to adjust the seasonings according to your preferences. You can add more garlic salt, Parmesan cheese, or even a dash of chili powder for a spicy kick.
  • Cover the Potatoes: Covering the potatoes with a damp paper towel prevents them from drying out during cooking.
  • Cook in Short Intervals: Microwave the potatoes in short intervals, checking and stirring them every 2-3 minutes, to ensure even cooking.
  • Check for Tenderness: Pierce the potatoes with a fork to check for tenderness. They should be soft and easily pierced when done.
  • Let the Potatoes Cool: Allow the potatoes to cool slightly before serving to prevent burning your mouth.

Conclusion:

Microwave Parmesan potatoes are a quick, easy, and delicious side dish that can be enjoyed as a part of various meals. Using the microwave to cook the potatoes saves time and energy while still delivering crispy, flavorful results. Experiment with different seasonings and herbs to create your own unique variations of this versatile dish.
