1 lb ground beef
1 packet taco seasoning (or homemade)
2/3 cup water
1 Tablespoon oil
20 corn tortillas
1 16 oz can refried beans
1 10 oz can red enchilada sauce
2 cups shredded cheddar cheese
1 roma tomato (, diced)
1 small can sliced olives
3 green onions (, chopped)

Steps:

  • Cook ground beef, crumbling it into small pieces with a wooden spoon as it cooks. Remove any grease.
  • Add taco seasoning and water and stir to combine.
  • Heat oil in a small skillet over medium-high heat. Once hot, cook corn tortillas one at a time until golden and slightly crisp on both sides, flipping half way through. Remove to a paper towel.

This is my clone version of Chi-Chi's original Mexican Pizza, before they changed the recipe and went out of business, lol.

Number Of Ingredients 12

8 ounces ground beef
1/2 cup water
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
4 large flour tortillas
3 tablespoons vegetable oil (or use Pam spray)
2 tomatoes, diced
6 ounces black olives, chopped
3 -4 green onions, chopped
6 ounces green chilies, chopped, drained
2 cups cheddar cheese or 2 cups monterey jack cheese, shredded

Steps:

  • Preheat oven to 400.
  • Fry the ground beef with the water, the cumin, oregano and salt, stirring until the water has evaporated; drain excess grease; cool.
  • Rub each tortilla on each side with a bit of vegetable oil.
  • Place tortillas on a baking sheet and bake for 4 minutes.
  • Remove from oven, and top with the seasoned beef, veggies, then the cheese.
  • Bake for 10 minutes, or until the cheese is melted.

Two small ( or large )soft tortilla shells
Two tablespoon(s) (or desired amount) of pizza sauce
1/2 cup(s) (or desired amount) of mozzerella cheese
1/2 cup(s) (or desired amount) of desired toppings (ham, bacon, pepperoni, mushrooms, olives, et cetera)

Steps:

  • Lay one soft tortilla shell on a paper towel (or microwave safe plate)and spoon on desired amount of pizza sauce.
  • Add desired amount of cheese and then add your desired toppings.
  • Place another soft tortilla on top and place in microwave.
  • Cook for approximately one minute (more if you use a large tortilla shell or a lot of toppings)- take out when cheese is melted.
  • Cut in 1/2 or into quarters if desired (will help it to cool down faster) and enjoy.
