MICROWAVE MUSHROOM MEATLOAF
Spending time in an extended-stay hotel with just a microwave and stovetop for cooking, along with minimal cookware, led me to be a bit creative at mealtime. I was craving meatloaf and came up with this recipe from foods I had on hand leftover from earlier meals. I was pleased with how it turned out considering my limited options. And it wasn't a reheated frozen dinner either!

- Cover and microwave on high for 3-5 minutes.
- Let stand for 10 minutes before slicing.
Tips:
- Use a microwave-safe dish: A casserole dish or baking dish will be able to withstand the heat of the microwave while cooking the meatloaf.
- Use a meatloaf mix: A pre-made meatloaf mix is a convenient option that includes all the necessary ingredients, making it easier to prepare.
- Add a glaze: Adding a glaze to the top of the meatloaf will give it a glossy, caramelized appearance and enhance its flavor.
- Cook the meatloaf on high power for the first few minutes: This will help to quickly brown the meatloaf and create a crispy crust.
- Reduce the power to medium or low for the remaining cooking time: This will help to prevent the meatloaf from overcooking and becoming dry.
- Use a meat thermometer to check the internal temperature of the meatloaf: The meatloaf is done when it reaches an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius).
- Let the meatloaf rest before slicing: Allowing the meatloaf to rest for a few minutes before slicing will help to redistribute the juices and prevent them from running out.

Whether you're a beginner cook or a seasoned pro, this microwave meatloaf recipe is sure to become a favorite in your kitchen.
