5-Minute Microwave Marshmallow Fudge image

Make homemade fudge in just a few minutes and so easily and have that gourmet taste at your fingertips!

3 cups of semi-chocolate chips (this is typically 1.5 packages of chocolate chips)
1 14oz. can of sweetened condensed milk
4 TBSP of butter
1 tsp. of vanilla
¼ tsp of salt
1 cup of mini marshmallows (or other mix-in you desire)

Steps:

  • Prepare the pan by covering an 8x8 pan with aluminum foil and spray the pan with non-stick cooking spray.
  • • Start with a large microwave safe bowl and add the chocolate chips and the sweetened condensed milk.
  • • Divide the butter into 4 1-TBSP slices and add to the mix.
  • • Pop this mixture in the microwave on high for 60 seconds.
  • • Pull it out (it will be hot) and start mixing. The chocolate chips and butter will mostly melt as you mix.
  • • Add the vanilla and salt and mix in.
  • • Pop it back in the microwave for another 30 seconds.
  • • Finish mixing until it is smooth and looks something like this:
  • • At this point, this is when you would add your marshmallows (or other mix-ins!) and gently fold them into the fudge mixture.
  • • Pour the fudge mixture into the pan and spread evenly with a spreader/spatula.
  • • Then place it in the fridge to harden.
  • • Once it is hard (about 2-hours), pull the foil out of the pan and lay flat on a cutting board.
  • • The best way to cut is with a large, sharp knife. I start by cutting all of the edges by about ¼ of an inch to make a perfect smooth square all around. BTW - these edges still taste great and a nice treat while you cut the fudge. ????
  • • To get 36 pieces, make 6 strips with the knife from one end of the fudge to the other. Then repeat on the next side and you will have 36 even pieces.

2 c. sugar
2/3 c. evaporated milk
2 c. semi-sweet chocolate chips
7 oz. jar marshmallow cream
1 tsp. vanilla
Optional: 1 c. chopped walnuts

Steps:

  • In a large, microwave-safe bowl, microwave butter for 1 minute or until melted.
  • Add sugar and evaporated milk and mix well.
  • Microwave 8-10 minutes (or often longer) on medium-high power until soft ball stage is reached (235 degrees F).
  • Add chocolate chips, marshmallow cream, vanilla, and nuts. Stir well.
  • Pour into a 9"x9" or similar dish and smooth the top.
  • Cover and chill in the refrigerator for at least 2 hours.

397g/14oz sweetened condensed milk (1 tin, Note 2)
50g/1.7oz unsalted butter (roughly chopped, Note 3)
2 cups/100g mini marshmallows (Note 4)

Steps:

  • Line a square tin (24cm x 5cm, 9" x 2") with baking/parchment paper, leaving a 1-2cm overhang on all 4 sides (Note 5)
  • Add milk chocolate, sweetened condensed milk and butter to a large heatproof jug.
  • Microwave the ingredients on high for 2 mins. Remove jug, place on heatproof surface and stir.
  • Return jug to microwave and heat on high for a further minute.
  • Remove jug from microwave, place on heatproof surface and stir till consistently combined (Note 6)
  • Add mini marshmallows to wet fudge and stir till the marshmallows are mixed in and covered by the chocolate.
  • Transfer wet fudge to lined cake/slice tin and place in fridge till set (minimum 1 hr)
  • Remove from fridge, place on bench for 10 mins, then use a sharp knife to cut into pieces
