1 jar (26 ounces) spaghetti sauce
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
2 cups 1% cottage cheese
1 tablespoon minced fresh parsley
1 large egg, beaten
1/4 teaspoon pepper
6 uncooked lasagna noodles
2 cups shredded mozzarella cheese, divided
1/2 cup water

Steps:

  • In a microwave-safe dish, microwave beef on high for 3 minutes; stir. Cook 2 minutes longer or until no longer pink; drain well. Stir in the spaghetti sauce, basil and garlic powder; cover and microwave for 2 minutes or until heated through. Set aside. In a bowl, combine the cottage cheese, parsley, egg and pepper., Spread 1/2 cup meat sauce in a greased microwave-safe 11x7-in. dish. Layer with 3 noodles, half the cottage cheese mixture, half the remaining meat sauce and 1 cup mozzarella cheese. Layer remaining noodles, cottage cheese mixture and meat sauce. 1/4 teaspoon freshly ground black pepper
2 1/4 cups grated mozzarella (about 9 ounces), divided
1/2 cup grated Parmesan (about 2 ounces), divided

Steps:

32 ounces pasta sauce
1/2 cup water
15 ounces ricotta cheese

This is another of those recipes my mom got from the 1980's microwave cooking class. You don't pre-cook the noodles for this. This recipe pre-dates turntables. To save wear and tear on your microwave's turn table take the glass turn table plate out, remove the roller ring and then put the plate back in upside down. This recipe requires a microwave safe 9x13 baking dish. I use a Pyrex one.

1 quart spaghetti sauce
1 (8 ounce) box lasagna noodles, noodles1/2 box
1/2 cup water

Steps:

  • Brown ground beef in a microwave safe dish (6-7 min on high).
  • Add sauce and water to beef and stir.
