PERFECT CORNED BEEF FROM THE MICROWAVE
I was given this recipe by a work friend about 17 years ago when I was just a young bride learning my way in the kitchen. I am still young and this is still my husband's favourite recipe for corn beef. It's simple and the flavour is not cluttered up with cloves and onion.

Steps:
- Place corned beef into oven bag.
- Add all ingredients & then tie knot in bag (or with string etc).
- Shake to mix.
- Place bag with meat fat side up in a microwave container which is large enough to fit (this is for safety reasons as liquid will be extremely hot when done).
- Pierce bag a couple of times to allow steam to escape.
- Microwave on HIGH for 10 Minutes.
- Then reduce to a simmer & cook for 20 minutes per 500grams (1.1lbs).(power level 6 on my microwave).
- Allow to stand for 30 Minutes.
- Slice and serve hot.
- (Leave any left over portions in liquid until serving so the meat does not dry out.).
- Note:- It is possible to make this in a large enough microwave bowl without the bag. The bowl must have a lid with holes and the liquid must cover the meat entirely ie. double the recipe.
MICROWAVE COOKED CORNED BEEF
Corned beef served with Orange & Ginger Sauce as given to me by my husband's cousin. Once you've cooked your corned beef this way, you won't do it any other way. This was cooked in a 600watt oven, so times may need changing for higher powered ovens.

Steps:
- Place orange,onion, cloves, thyme and ginger ale into a large microwave proof casserole dish. Cook on high for 10 minutes.
- Add meat and cook on low for 1½ to 2 hours.
- For the Orange and Ginger Sauce:- Bring remaining ingredients to the boil stirring continuously until thickened. Serve hot.
Tips:
- Choose the right cut of corned beef. Look for a brisket that is at least 3 pounds and has a good amount of marbling.
- Trim the corned beef. Remove any excess fat from the brisket before cooking.
- Season the corned beef. Rub the brisket with a mixture of salt, pepper, and garlic powder.
- Place the corned beef in a microwave-safe dish. Add 1 cup of water to the dish.
- Cover the dish and cook the corned beef on high power for 15 minutes.
- Reduce the power to medium and cook the corned beef for an additional 1 hour, or until it is tender.
- Let the corned beef rest for 10 minutes before slicing and serving.
