Categories     Chicken     Dinner

Yield 5 servings

Number Of Ingredients 5

1 cup ketchup
5 tablespoons curry powder
1 teaspoon cayenne pepper
salt
8 chicken legs

Steps:

  • In a large, round microwave safe casserole dish combine the ketchup, curry powder and cayenne powder and mix together. Add chicken pieces and turn to coat. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish. Cover and cook in the microwave on high for 12 to 15 minutes or until chicken is cooked through and juices run clear.

Tips:

  • Preparing the chicken: Ensure that the chicken breasts are boneless and skinless, cut into bite-sized pieces, and evenly coated with the marinade. The yogurt and spices help tenderize the chicken and infuse it with flavor.
  • Using the right microwave-safe bowl: Choose a large microwave-safe bowl that can accommodate the chicken and sauce comfortably. This will prevent splattering and ensure even cooking.
  • Cooking time: The cooking time will depend on the wattage of your microwave. Start with the recommended time and adjust if needed. Overcooking can result in dry chicken.
  • Adding vegetables: If desired, add your favorite vegetables along with the chicken during the cooking process. Commonly used vegetables include onions, bell peppers, and carrots.
  • Adjusting the spice level: The recipe provides a mild to medium spice level. Feel free to adjust the amount of chili powder and garam masala according to your preference.
