8 cups sliced carrots
2 medium onions, sliced
5 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1 cup seasoned croutons

Steps:

  • Place carrots in a saucepan and cover with water; bring to a boil. Cook until crisp-tender. Meanwhile, in a skillet, saute onions in 3 tablespoons butter until tender. Stir in the soup, salt, pepper and cheddar cheese. , Drain carrots; add to the onion mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with croutons. 600g baby carrots (Chantenay), large ones halved
½ bunch of parsley, finely chopped

  • Mash the butter in a bowl with the honey and fennel seeds. Cover and chill until needed. Can be prepared up to three days ahead.
  • Trim the tops off the carrots and wash under cold running water, scrubbing them with a clean scourer to get rid of any dirt. Put the carrots in a large, microwave-proof bowl with 2 tsp water. 1/4 teaspoon cinnamon

1/2 cup hot water

Steps:

  • Mix melted butter, brown sugar, cinnamon and salt in a small bowl. Stir in hot water. If microwaving use 1/4 cup hot water.
  • Place carrots in baking dish and pour butter mixture over carrots. Stir to coat.
