These caramels were "homework" for a candy-making class that I took some time ago...and I've repeated that assignment over and over since! I usually make an extra batch and freeze it for company or last-minute gift-giving. After only about 20 quick seconds in the microwave, the frozen caramel is soft enough to cut, wrap and pack into a candy jar.

1 cup unsalted butter
2-1/3 cups (1 pound) brown sugar, firmly packed
1 cup light corn syrup
1 can (14 ounces) sweetened condensed milk
1/8 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts, optional

Steps:

  • In 2-qt. microwave-safe pitcher, combine the butter, sugar, syrup, milk and salt. Microwave on high for 2-3 minutes, stirring once after every minute. When butter is melted, stir well. Attach microwave candy thermometer. Microwave on high for about 8 minutes or until mixture reaches 245° (firm-ball stage). No stirring is needed. Remove from microwave; stir in vanilla and walnuts. Let stand for 10 minutes, stirring well several times. Pour into buttered 13x9-in. pan (smaller 11x7-in. pan yields thicker candy as shown in photo). Refrigerate until cool. Invert pan. Carefully tap out whole block of candy; cut in squares. Wrap in waxed paper and store in refrigerator. (Can also freeze.)

1-1/4 cups all-purpose flour
1-1/4 cups quick-cooking oats
3/4 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
24 caramels
1/4 cup milk
1 cup semisweet chocolate chips
1/2 cup chopped walnuts, optional

Steps:

  • In a microwave-safe bowl, heat butter, uncovered, on high for 20-30 seconds or until softened. Combine flour, oats, brown sugar, baking soda and salt; stir into butter until blended. , Set a third of the mixture aside for topping. Press remaining mixture onto the bottom of an 8-in. square microwave-safe dish. Cook, uncovered, on high for 1-2 minutes or until crust is raised and set (crust will be uneven), rotating a half turn after each minute. , In a 1-qt. microwave-safe dish, heat the caramels and milk, uncovered, on high for 1 minute or until melted and smooth, stirring every minute. 14 -16 ounces caramel candies
1/4 cup water
1/2 cup peanut butter
4 cups Cheerios toasted oat cereal
1 cup salted peanuts
1 cup chocolate chips
1/4 cup peanut butter
2 tablespoons shortening

Steps:

  • Combine caramels, water and peanut butter in a large mixing bowl (microwave safe bowl).
  • microwave at high 3-5 minutes or until melted and smooth, stirring after 2 minutes.
  • Stir in cereal and peanuts.

1/2 c peanut butter
4 c cheerios
1 c salted peanuts
TOPPING:
1 c chocolate chips
1/4 c peanut butter
2 Tbsp shortening

Steps:

  • 1. COMBINE CARAMELS, WATER, AND PEANUT BUTTER IN LARGE MIXING BOWL. MICROWAVE ON HIGH 3-5 MINUTES OR UNTIL MELTED AND SMOOTH, STIRRING AFTER EACH 2 MINUTES. STIR IN CEREAL AND PEANUTS.

1 bag (14 oz) vanilla caramels, unwrapped
3 tablespoons water
2 cups miniature marshmallows
1/2 cup semisweet or milk chocolate chocolate chips
1 tablespoon shortening
1/4 cup M&M's® minis chocolate candies

Steps:

  • Spray bottom and sides of 13x9-inch pan with cooking spray. Place cereal in large bowl; set aside.
  • In medium microwavable bowl, microwave unwrapped caramels and water uncovered on High 2 minutes 30 seconds to 4 minutes, stirring after each minute, until mixture is smooth. Remove from microwave.
  • Pour caramel mixture over cereal in bowl; stir until cereal is evenly coated. Gently stir in marshmallows. Pour cereal mixture into pan. With buttered back of spoon, press mixture in pan until even.
  • In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 to 2 minutes, stirring after each minute, until mixture is smooth.
