1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup butter, melted
3/4 cup all-purpose flour

1 cup chopped walnuts

Steps:

  • In a bowl, beat sugar, eggs, vanilla and salt on medium speed for 1 minute. Add butter; beat until blended. Combine flour and cocoa. Gradually add to sugar mixture; mix well. Stir in walnuts. Transfer to a greased microwave-safe 8-in. square dish. Microwave, uncovered, on high for 3-4 minutes, rotating every 1 minute or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry). 1/2 cup (113g) butter ((1 stick))
3/4 cup (170g) sugar
2 eggs
3/4 cup (96g) flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/4 teaspoon salt if using unsalted butter
1/3 cup (53g) semi-sweet or dark chocolate chips (recommended) (makes brownies extra fudgy)
1/2 cup (75g) chopped walnuts

Steps:

  • Instructions are for a 1200 watt microwave oven. Adjust accordingly - see Note 2.
  • MELT CHOCOLATE AND BUTTER: Microwave butter and chocolate for 1 1/2 minutes on High in a measuring cup or bowl. Stir until melted and smooth.
  • MAKE BATTER: In a separate bowl, use a fork or whisk to mix sugar and eggs together. Add flour, vanilla, baking powder, salt if using and mix to combine. Stir in chocolate-butter mixture. Stir in chocolate chips or nuts if using.
  • MICROWAVE TO COOK: Pour batter in a microwaveable dish - approximately 8 x 8 x 2 -sprayed with oil. Place a small plate or saucer upside down on the microwave turntable/floor. Then place dish on top of the inverted plate. Microwave for 3 minutes 10 seconds to 3 minutes 30 seconds. Note 2. If microwave turntable doesn't turn automatically, stop and turn the dish once or twice, then continue cooking. Don't over bake. You can always add more time if needed.   • SERVE: Let brownies cool for 10 minutes. Serve semi warm if desired with ice cream, berries, whipped cream or dusted icing/confectioner sugar.

1 stick unsalted butter
3 oz unsweetened baking chocolate
2 large eggs
1 c white sugar or raw sugar
1/2 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 c chocolate chips or chunks
1/2 c roasted nuts, chopped (optional)
cooking spray or pan coating

Steps:

  • 1. Put the butter and chocolate into a microwave safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds, to melt the chocolate. Set aside to cool slightly.
  • 2. In another bowl, whisk together the eggs and sugar. I used raw sugar when I made this, but regular white granulated sugar will also work.
  • 3. In a large bowl, stir the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine.
  • 4. Spray an 8 x 8 x 2-inch microwave safe glass dish with cooking spray or coat with pan coating. Pour the batter into the pan, spread it out evenly, and scatter the chocolate chunks (and nuts if used) on top.
  • 5. Microwave on high power for 5 minutes. Remove from the oven and let rest for 5 minutes before cutting and eating.
