MAMAW'S CHICKEN AND RICE CASSEROLE
I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

Tips:
- Choose the right broccoli: Fresh, firm broccoli florets work best for this recipe. Avoid florets that are wilted or yellowed.
- Cut the broccoli into even-sized florets: This will help them cook evenly in the microwave.
- Use a microwave-safe baking dish: Make sure the dish is large enough to hold the broccoli and chicken without overcrowding.
- Season the chicken and broccoli well: This will help to enhance the flavor of the dish.
- Don't overcook the chicken and broccoli: Microwave cooking can be quick, so keep an eye on the dish to avoid overcooking.
- Let the dish rest before serving: This will help the juices to redistribute throughout the dish, resulting in a more flavorful and tender result.
