PAM'S MICROWAVE BOMBER BREAKFAST BAKE

I wanted something more than just scrambled eggs so I came up with this fast,easy, tasty microwave version of the classic "Breakfast Casserole". Larry proclaimed it "The BOMB!" - 1. Toast and butter the bread and cut into small squares, about 3/4 inch sq. Place in large microwaveable bowl or casserole (about 8 -10 inches across). Chop the beef sausage into small pieces, add to bowl. Shred cheeses directly into the bowl. Sprinkle in chives if using.
- 2. In another smaller bowl, break eggs, add cream and milk and all seasonings desired. Whisk together well to mix. Pour the egg mixture over the bread mixture and mix together so all bread is moistened and ingredients are evenly distributed. Submerge as much bread as possible under the egg mixture.
- 3. Place bowl in microwave and cook for 4 minutes at 30% power. Let rest three minutes and remove from microwave. The center will most likely be VERY liquid, so using a spatula or fork, Lift the edges and let liquid eggs flow to outside of bowl. Carefully fold the outer edges of the casserole up and into the center all around. Level off and place back in microwave. Cook for 4 more minutes at 30% power, and let rest 5 minutes in the micro. At this time, the mixture should be solid and done. If not again lift edges to let egg mix move and microwave 1 more minute. You can top this with some extra cheese or some paprika or more chives to garnish the top. Cut into quarters and serve with a nice fruit bowl or some kind of juice. (tomato, V8, orange, etc.)

- In a non-metallic 2 quart casserole dish, stir together potatoes, carrot, onion, parsley and butter. Cover and microwave on High for 5 minutes, stirring once or twice. Season with salt and pepper.
- In a medium bowl, beat together, eggs, milk, mustard and hot pepper sauce. Stir in cubed ham. Pour egg mixture into casserole, stir to combine.
- Cover dish and microwave on high for 3 minutes. Draw cooked egg toward middle of dish and microwave on medium for 10 to 12 minutes. If you do not have a turntable rotate dish 2 to 3 times. Sprinkle cheese on top, cover and microwave for 30 to 60 seconds until cheese is melted. Let stand 5 minutes before serving.

- Butter an 8-inch square baking dish; set aside. Put 3 tablespoons of the butter in a microwave-safe small bowl or liquid measure; microwave for 30 seconds to 1 minute to melt the butter.
- Whisk together the flour, baking powder, baking soda, 3 tablespoons of the sugar and 1/2 teaspoon salt in a large bowl. In a separate small bowl, whisk together the buttermilk, 2 of the eggs and the melted butter. Add the wet ingredients to the dry ingredients, and stir until just combined.
- Heat a large nonstick skillet or griddle over medium heat. Melt a little of the remaining butter in the pan. For each pancake, spoon 1/4 cup of batter into the skillet and cook until the bottom is golden brown and small bubbles appear on the top, 2 to 3 minutes. Flip and cook until golden brown on the other side, about 2 minutes. If the pancakes brown too quickly, reduce the heat to medium-low. Transfer the pancakes to a plate as finished. Repeat until all the batter is used, adding more butter to the pan as necessary. (You should have at least 12 pancakes.)
- Whisk together the half-and-half, vanilla, the remaining 5 eggs and 3 tablespoons sugar, and 1/4 teaspoon salt in a large bowl.
- Shingle the pancakes in the prepared baking dish. Pour the egg mixture evenly over the pancakes. Cover the dish with plastic wrap and refrigerate for at least 8 hours up to overnight to allow the pancakes to soak in the custard.
- Preheat the oven to 350 degrees F. Remove the plastic wrap, and bake the casserole until it feels firm yet springy to the touch in the center and the custard is set, 50 to 60 minutes. Let cool 15 minutes before serving. Serve warm with maple syrup, blueberries and pats of butter.
